Apple Samoas are a quick and delicious dessert featuring crisp apple slices topped with a luscious coconut and nut butter mixture, finished with a drizzle of melted chocolate. This no-bake treat is perfect for a healthy snack or a guilt-free dessert that combines the sweet crunch of apples with rich, creamy, and chocolatey flavors.

Ingredients

For the Apple Base

  • 1 apple (Honeycrisp or Pink Lady recommended)

For the Topping

  • ⅓ cup unsweetened shredded coconut
  • 3 tablespoons almond butter or cashew butter or seed butter of choice
  • ½ tablespoon maple syrup

For the Chocolate Drizzle

  • 2 tablespoons chocolate chips
  • ½ teaspoon coconut oil

Instructions

  1. Prepare the apples: Core the apple and cut it into ¼-inch thick slices. Aim for around 3 to 4 slices depending on the size of your apple.
  2. Make the coconut topping: In a bowl, combine the unsweetened shredded coconut, almond (or chosen) butter, and maple syrup. Mix thoroughly until the ingredients are well incorporated and the mixture is sticky enough to spread.
  3. Assemble the Samoas: Spread the coconut and nut butter mixture evenly on top of each apple slice, pressing gently to adhere.
  4. Prepare the chocolate drizzle: In a small microwave-safe bowl, melt the chocolate chips together with the coconut oil in short bursts, stirring between each until smooth and glossy.
  5. Drizzle the chocolate: Using a spoon or fork, drizzle the melted chocolate over each topped apple slice, creating a decorative layer of chocolate.
  6. Set and serve: Place the prepared apple slices on parchment paper and transfer them to the freezer. Chill for about 5 to 10 minutes or until the chocolate firms up. Enjoy immediately or store chilled for a refreshing dessert.

Notes

  • Use your preferred nut or seed butter to adjust the flavor and dietary needs.
  • Honeycrisp apples offer a perfect balance of sweetness and tartness, but Pink Lady apples work well too.
  • Store leftovers in the freezer to keep the chocolate firm and the apples fresh.
  • For a vegan option, ensure the chocolate chips used are dairy-free.
  • To avoid apple browning, you can lightly brush apple slices with lemon juice before topping.
