Apricot Cashew Energy Bites are a nutritious and delicious no-bake snack combining the natural sweetness of dried apricots and dates with crunchy raw cashews, shredded coconut, and a hint of cinnamon and orange zest. These bite-sized energy boosters are perfect for a quick snack or a healthy appetizer, offering a sticky, chewy texture and a flavorful blend of fruity and nutty notes. Easy to prepare in under 30 minutes with minimal ingredients and no cooking required.

Ingredients

Dried Fruit

  • 1 cup dried apricots (about 16 pieces)
  • 1/2 cup Medjool dates, pitted (about 5-6)

Nuts & Other

  • 2 cups raw cashews
  • 1/3 cup shredded coconut
  • 1/4 teaspoon cinnamon
  • 1 tablespoon orange zest
  • 1/4 cup water
  • Pinch of salt

Instructions

  1. Prepare Ingredients: Add all of the ingredients except for the water to a food processor or high-speed blender. Pulse the mixture together to finely chop the dried fruit and nuts into a coarse, crumbly consistency.
  2. Form Sticky Mixture: Add the 1/4 cup water to the blender and blend again until a sticky, cohesive mixture forms that holds together when pressed.
  3. Shape Energy Bites: With wet hands to prevent sticking, scoop out about 1.5 tablespoons of the mixture and roll it into balls. Place the formed bites onto a parchment-lined tray or baking dish.
  4. Chill and Set: Refrigerate the energy bites for at least 30 minutes to firm up and harden, allowing them to hold their shape.
  5. Storage: Store the energy bites in an airtight container in the fridge for up to 3 weeks or freeze them for up to 3 months for longer shelf life.

Notes

  • Wet your hands before rolling to prevent the mixture from sticking to your skin.
  • You can substitute raw cashews with other nuts like almonds or walnuts if preferred.
  • If mixture is too dry, add water gradually until it sticks together well.
  • For added flavor, consider adding a pinch of nutmeg or a drizzle of honey (adjust nutrition accordingly).
  • These energy bites are gluten-free and naturally sweetened with dried fruit, making them a healthy snack option.
