This Asparagus and Goat Cheese Panini blends roasted vegetables with creamy goat cheese and pesto mayo, grilled to perfection for a warm, flavorful sandwich. Perfect for a satisfying lunch or light dinner, it highlights fresh asparagus, charred red pepper, and peppery arugula on crusty ciabatta rolls.

Ingredients

Vegetables and Oil

  • 1 large red bell pepper
  • 1 bunch asparagus, ends trimmed
  • 2 tablespoons avocado oil, divided
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Spreads and Cheese

  • 2 tablespoons pesto
  • ½ cup mayonnaise
  • ½ cup spreadable goat cheese

Greens and Bread

  • 1 cup arugula
  • 2 ciabatta rolls

Instructions

  1. Broil the Red Pepper: Preheat your oven's broiler. Place the whole red bell pepper on a sheet pan and broil for 20 minutes, turning to allow all sides to become nicely charred.
  2. Steam and Cool the Pepper: Transfer the charred pepper to a bowl, cover it to steam and loosen the skin, and let it cool for 15 minutes.
  3. Roast the Asparagus: Adjust the oven temperature to 400°F. Place the trimmed asparagus on a baking sheet, brush with 1 tablespoon of avocado oil, sprinkle with salt and pepper, and roast for 20 minutes until tender.
  4. Prepare the Roasted Pepper: Once cooled, peel off the pepper's skin and discard the seeds. Slice the pepper into thick 1-inch strips.
  5. Make the Pesto Mayo: In a small bowl, mix the pesto and mayonnaise until well combined to create a flavorful spread.
  6. Assemble the Panini: Slice the ciabatta rolls in half horizontally. Spread the pesto mayo on one side and the goat cheese on the other. Layer the roasted asparagus, sliced roasted red pepper, and fresh arugula over the pesto mayo side.
  7. Grill the Sandwiches: Heat the remaining 1 tablespoon of avocado oil in a large skillet over medium-high heat. Place the assembled sandwiches in the skillet, pressing down occasionally with a heavy pot lid. Cook for about 5 minutes on each side until the bread is golden and crispy and the cheese is warmed through.
  8. Serve: Cut the paninis in half and serve immediately for a warm, delicious meal.

Notes

  • Using avocado oil for roasting and grilling adds a mild flavor and keeps the sandwich healthy.
  • Allowing the red pepper to steam after broiling makes peeling easier and enhances its sweet flavor.
  • Pressing the sandwich while cooking helps achieve a crispy exterior and melts the cheese perfectly.
  • Substitute pesto with a vegan alternative or basil sauce for dietary adaptations.
  • Serve with a side salad or chips for a complete meal.
