A delicious and nutritious avocado toast topped with creamy cottage cheese and eggs prepared to your liking. This easy-to-make recipe combines crispy toasted sourdough, smashed avocado with a hint of citrus, protein-rich cottage cheese, and perfectly cooked eggs, finished with flavorful toppings like microgreens, green onions, and chili crunch for extra zest.

Ingredients

Bread and Base

  • 1 slice sourdough bread
  • Olive oil, for toasting

Avocado Spread

  • ½ avocado, smashed with a squeeze of lime or lemon and a sprinkle of salt

Dairy and Protein

  • ⅓ cup cottage cheese
  • 2 eggs, prepared as preferred (fried, poached, scrambled, or hard-boiled)

Toppings (Optional)

  • Microgreens
  • Green onions
  • Thinly sliced tomato
  • Red onion
  • Chili crunch or bagel seasoning
  • Flaky sea salt
  • Drizzle of honey

Instructions

  1. Toast the Bread: Heat a stainless steel skillet over medium heat and add a small amount of olive oil. Add the sourdough slice and toss it gently to coat both sides with oil. Fry the bread for 1-2 minutes per side until golden brown and crisp. Alternatively, you can spread mayonnaise on both sides and use nonstick spray instead of oil.
  2. Prepare the Avocado Spread: In a small bowl, smash the avocado with a squeeze of lemon or lime juice and a generous pinch of salt to create a creamy, flavorful spread.
  3. Cook the Eggs: Prepare the eggs according to your preference. For hard-boiled eggs, place them in an air fryer basket at 250°F (120°C) and air fry for 15 minutes for medium-boiled or 18 minutes for hard-boiled. Immediately plunge cooked eggs into ice water to stop cooking and make peeling easier. Season with salt and pepper.
  4. Assemble the Toast: Spread the smashed avocado evenly over the toasted bread. Top with the cottage cheese, then add the cooked eggs. Garnish with your choice of microgreens, green onions, sliced tomato, red onion, chili crunch or bagel seasoning, flaky sea salt, and a drizzle of honey for added flavor and texture.

Notes

  • Using an air fryer for hard-boiling eggs is a convenient, hands-off method that results in perfectly cooked eggs.
  • Feel free to customize toppings to your preference or omit honey if you want to keep it savory.
  • Sourdough bread provides a great texture and tangy flavor but you can use any sturdy bread you like.
  • If you don’t have an air fryer, boil eggs traditionally on the stovetop for about 9-12 minutes depending on desired doneness.
  • Adding a squeeze of citrus to avocado prevents browning and enhances freshness.
