A simple and delicious baked sweet potato recipe that results in tender, fluffy sweet potatoes with a lightly crisp skin. Perfect as a nutritious side dish or a base for a variety of tasty toppings like butter, Greek yogurt, guacamole, and more.

Ingredients

Main Ingredient

  • 2 large sweet potatoes

Toppings (optional)

  • Butter or vegan butter, to taste
  • Sea salt, to taste
  • Chives, chopped, for garnish
  • Greek yogurt or tzatziki, as desired
  • Guacamole, as desired
  • Creamy avocado cilantro lime dressing, as desired

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with foil to catch any drips and make cleanup easier.
  2. Prepare Sweet Potatoes: Using a fork, poke several holes all around each sweet potato to allow steam to escape during baking and prevent them from bursting.
  3. Bake the Sweet Potatoes: Place the pierced sweet potatoes on the prepared baking sheet and roast in the oven for 40 to 50 minutes. They are done when the skin is slightly crisp and the inside is soft and fluffy when pierced with a fork.
  4. Serve with Toppings: Remove the sweet potatoes from the oven and split them open. Add your preferred toppings such as butter, sea salt, chives, Greek yogurt, guacamole, or avocado cilantro lime dressing for extra flavor.

Notes

  • You can adjust the baking time depending on the size of the sweet potatoes; larger potatoes may need closer to 50 minutes.
  • For a vegan option, substitute butter with vegan butter or use only plant-based toppings.
  • Make sure to poke the sweet potatoes well to avoid any bursting in the oven.
  • Leftovers can be refrigerated and reheated in the oven or microwave.
  • Sweet potatoes can also be cooked in an air fryer or microwave if you prefer quicker methods.
