Ingredients

Beef Mixture

  • 1 pound lean ground beef
  • 1 packet taco seasoning (or homemade taco seasoning)
  • 1/4 cup water

Enchiladas

  • 8 tortillas - corn tortillas or taco-size flour tortillas
  • 2 cups enchilada sauce
  • 16 ounces shredded colby jack cheese

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly spray a 9x13-inch baking dish with non-stick cooking spray to prevent sticking.
  2. Cook the Ground Beef: Heat a large skillet over medium heat. Add the ground beef and break it apart with a wooden spoon. Cook, stirring frequently, until the beef is fully browned. Drain any excess fat from the skillet.
  3. Add Seasoning: Stir the taco seasoning and 1/4 cup water into the browned ground beef. Continue to cook over medium heat for 2 to 3 minutes, stirring often to evenly distribute the seasoning. Remove the skillet from heat.
  4. Prepare the Baking Dish: Pour about 1/2 cup of enchilada sauce into the bottom of the prepared baking dish and spread it evenly.
  5. Assemble the Enchiladas: Lay out the tortillas on a flat surface. Evenly distribute the seasoned beef along the center of each tortilla, shaping the filling into a straight line.
  6. Roll and Arrange: Roll each tortilla tightly around the beef filling and place seam side down into the baking dish atop the sauce.
  7. Add Sauce and Cheese: Pour the remaining enchilada sauce generously over the rolled tortillas. Then sprinkle the shredded colby jack cheese evenly over the sauce-covered enchiladas.
  8. Bake: Place the baking dish in the preheated oven and bake for 20 to 25 minutes, or until the cheese is fully melted and bubbly.
  9. Serve: Remove from the oven and serve hot with your favorite toppings such as sour cream, chopped cilantro, diced onions, or sliced jalapeños.

Notes

  • For a spicier dish, add diced jalapeños or a pinch of cayenne pepper to the beef mixture.
  • Use corn tortillas for a gluten-free option.
  • Leftover enchiladas can be refrigerated for up to 3 days or frozen for up to 1 month.
  • Customize the cheese to your preference—monterey jack, cheddar, or a Mexican cheese blend also work well.
  • Serve with sides like Mexican rice, beans, or a fresh salad for a complete meal.
