This creamy and delicious cottage cheese ice cream recipe offers a healthier alternative to traditional ice cream by using full-fat cottage cheese as the base. Sweetened with honey and enhanced with vanilla, it can be customized with delightful blueberry swirl or cookies & cream variations, making it a versatile and refreshing treat perfect for warm days or anytime you crave a cool dessert.

Ingredients

Base Ingredients

  • 2 cups full-fat cottage cheese
  • ¼ cup honey
  • 2 tsp vanilla extract or vanilla bean paste

Blueberry Swirl Variation

  • ¼ cup blueberry preserves or ½ cup blended blueberries

Cookies & Cream Variation

  • ½ cup crushed Oreos

Instructions

  1. Blend the base: Combine the full-fat cottage cheese, honey, and vanilla extract in a blender. Blend for 30 seconds to 1 minute until the mixture becomes smooth and creamy, creating the ice cream base.
  2. Make the blueberry flavor: Pour half of the blended cottage cheese mixture into a 9-inch loaf pan or glass dish. Add dollops of half the blueberry preserves on top, then gently swirl the preserves into the mixture using a knife or toothpick. Repeat the process with the remaining cottage cheese mixture and blueberry preserves to create beautiful swirls.
  3. Make the Cookies & Cream flavor: Alternatively, fold ½ cup of crushed Oreos into the blended ice cream base using a spatula. Transfer the mixture to a loaf pan and sprinkle extra Oreo crumbs on top as a garnish for added texture and flavor.
  4. Freeze: Cover the dish tightly with plastic wrap, pressing it directly onto the surface of the ice cream to prevent the formation of ice crystals. Freeze for at least 4 hours, or until the ice cream is fully frozen and scoopable.

Notes

  • Pressing plastic wrap directly onto the ice cream surface minimizes ice crystals and results in a smoother texture.
  • You can experiment with other flavor variations such as chocolate peanut butter, strawberry cheesecake, or mango for variety.
  • Full-fat cottage cheese provides a creamy texture but you can try low-fat versions if desired though it might affect creaminess.
  • Use a high-speed blender for the smoothest ice cream base.
  • Allow the ice cream to sit at room temperature for a few minutes before scooping for easier serving.
