Ingredients

Salmon Fillets

  • 4 salmon fillets (about 6 ounces each)

Seasoning & Marinade

  • 2 tablespoons olive oil
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon cracked black pepper (just a pinch if using finely ground black pepper)
  • 2 teaspoons minced garlic
  • 1 teaspoon Italian herb seasoning blend (or herbs de Provence, or ¼ teaspoon each dried thyme, parsley, oregano, and basil)
  • 1 medium lemon

Instructions

  1. Preheat and Prepare: Preheat the oven to 400 degrees Fahrenheit and lightly grease a large baking pan to prevent sticking. Arrange the salmon fillets on the baking sheet in a single layer, then season them generously with salt and pepper to enhance their natural flavors.
  2. Make Herb Mixture and Coat Salmon: In a small bowl, stir together olive oil, minced garlic, Italian herb seasoning, and the juice of half a lemon. Spoon this mixture evenly over the salmon fillets, rubbing it thoroughly over the tops and sides to ensure every part is coated for maximum flavor. Then, thinly slice the remaining half of the lemon and place a slice on top of each salmon fillet.
  3. Bake the Salmon: Place the baking pan in the preheated oven and bake for 12-15 minutes until the salmon turns opaque and flakes easily when tested with a fork. For a slightly crispier, browned finish, optionally broil the salmon for the last 1-2 minutes.
  4. Garnish and Serve: Remove the salmon from the oven and garnish with fresh thyme or parsley if desired for added color and aroma. Serve immediately as a healthy, flavorful main course.

Notes

  • Make sure not to overcook the salmon to keep it moist and tender; check for flakiness with a fork starting at 12 minutes.
  • Using fresh lemon juice and herbs brightens the dish and complements the rich flavor of the salmon.
  • You can substitute the Italian herb blend with herbs de Provence or a mix of thyme, parsley, oregano, and basil.
  • Broiling at the end is optional but helps create a slight crisp on top.
  • This recipe works well with other fatty fish like trout or halibut as a substitute.
