A delightful Blueberry Peach Crumble combining juicy blueberries and sweet peaches topped with a buttery, cinnamon-spiced oat crumble. This easy-to-make dessert bakes to golden perfection and can be served warm or at room temperature, perfect with a scoop of vanilla ice cream.

Ingredients

Fruit Mixture

  • 2 cups blueberries
  • 2 1/2 cups peeled and sliced peaches (5-6 peaches)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour

Crumble Topping

  • 1/2 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 6 tablespoons cold butter, diced

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the crumble.
  2. Prepare Fruit Mixture: In a large bowl, gently combine the blueberries, peeled and sliced peaches, fresh lemon juice, lemon zest, vanilla extract, 1/2 cup granulated sugar, and 1/4 cup all-purpose flour until the fruit is well coated. Let this mixture sit to allow the flavors to meld as you prepare the topping.
  3. Make Crumble Topping: In a separate large bowl, whisk together the 1/2 cup flour, old-fashioned oats, brown sugar, 1/4 cup granulated sugar, salt, and ground cinnamon. Using your fingers, cut the cold diced butter into the mixture until large crumbs form and the mixture holds together when pressed.
  4. Assemble Crumble: Transfer the fruit mixture to a 2-quart ceramic, glass baking dish, or large cast iron skillet. Evenly sprinkle the crumble topping over the fruit mixture, covering it completely.
  5. Bake Until Golden: Place the baking dish on a large baking sheet to catch any drips and bake in the preheated oven for 40 to 45 minutes. Bake until the topping is golden brown and crisp, and the fruit juices are bubbling around the edges.
  6. Serve: Remove from oven and let cool slightly. Serve the crumble warm or at room temperature, optionally with a scoop of vanilla ice cream for added indulgence.

Notes

  • Use ripe but firm peaches to avoid a mushy fruit base.
  • Make sure the butter is cold when cutting into the topping for a crumbly texture.
  • You can substitute rolled oats with quick oats but the texture will be slightly different.
  • For a vegan option, replace butter with plant-based margarine and use a vegan ice cream topping.
  • To prevent bubbling over, place the baking dish on a baking sheet as instructed.
  • The crumble is best enjoyed the same day but can be refrigerated and gently reheated.
