Ingredients

Cheese and Vegetables

  • 2 (5.2 ounce) packages Boursin Cheese (Garlic and Herb)
  • 2 pints Cherry or Grape Tomatoes
  • 4 Garlic Cloves (minced)
  • 1/2 teaspoon Red Pepper Flakes
  • 1/4 cup Fresh Basil (about 6 leaves)
  • 1 cup Fresh Baby Spinach (optional, chopped)

Pasta and Seasonings

  • 3 to 4 Tablespoons Extra Virgin Olive Oil
  • Salt and Pepper (to taste)
  • 10 to 16 ounces Pasta (your choice; penne, rigatoni or shells recommended)
  • 1/2 cup Pasta Water (reserved from cooking pasta)
  • 1/2 cup Freshly Grated Parmesan Cheese

Instructions

  1. Preheat and Prepare Ingredients: Preheat your oven to 375°F (190°C). In a 9 x 13 inch baking dish, place the two rounds of Boursin cheese and scatter the cherry or grape tomatoes evenly around them. Drizzle with 3 to 4 tablespoons of extra virgin olive oil, then season generously with salt and pepper. Add the minced garlic and sprinkle the red pepper flakes evenly over the top.
  2. Bake the Cheese and Tomatoes: Place the baking dish in the preheated oven and bake for 30 to 35 minutes, until the tomatoes are bursting and softened, and the Boursin cheese has melted into a creamy sauce.
  3. Cook Pasta: While the cheese and tomatoes are baking, bring a large pot of water to a rolling boil. Generously salt the boiling water to enhance the pasta’s flavor. Add 10 to 16 ounces of your favorite pasta and cook according to package instructions until al dente. Before draining, reserve 1/2 cup of the starchy pasta cooking water, then drain the pasta.
  4. Toss Pasta with Sauce: Once the Boursin and tomatoes are done roasting, remove the baking dish from the oven. Mix the roasted tomatoes and melted cheese to create a sauce, then toss this sauce with the drained pasta and the reserved pasta water to loosen the sauce to your desired consistency.
  5. Finish and Serve: Sprinkle in the fresh basil leaves and the chopped baby spinach if using, tossing gently to combine. Finally, top the pasta with freshly grated Parmesan cheese before serving immediately for a rich, creamy, and vibrant meal.

Notes

  • You can use any pasta shape you prefer, but short tubular shapes like penne or rigatoni work best to hold the sauce.
  • If you like it spicier, increase the red pepper flakes to taste.
  • Fresh baby spinach is optional but adds a nice color contrast and nutrition boost.
  • Reserve some pasta water to adjust the sauce consistency; add more if the sauce feels too thick.
  • This dish reheats well but is best enjoyed fresh for the melty texture.
