Boursin Salmon is a quick and flavorful dish featuring tender salmon fillets cooked in a creamy, herb-infused Boursin cheese sauce. This elegant yet simple skillet recipe combines sautéed onions, garlic, and fresh lemon juice to create a rich sauce that complements the salmon perfectly, making it ideal for a satisfying weeknight dinner or a special occasion.

Ingredients

Salmon

  • 1 pound fresh salmon (cut into 4 pieces)
  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)
  • 1 tablespoon olive oil
  • 1 tablespoon butter

Sauce

  • 1/2 medium onion (chopped)
  • 3/4 cup chicken broth (use low sodium if sensitive to salt)
  • 1 teaspoon fresh lemon juice
  • 1 (5.2 oz/150g) package Boursin Fine Herbs & Garlic cheese (softened)
  • 1-2 tablespoons chopped parsley

Instructions

  1. Prepare the Salmon: Take the salmon out of the fridge 15-30 minutes prior to cooking to bring it to room temperature. Cut the salmon into 4 even pieces, then pat each piece dry with paper towels. Season both sides with garlic powder, salt, and pepper to taste.
  2. Sear the Salmon: Heat the butter and olive oil together in a skillet over medium-high heat. Once the mixture is hot and shimmering, add the salmon pieces. Cook for 3-4 minutes on each side until the salmon is lightly browned but not fully cooked. Remove the salmon from the skillet and set aside on a plate.
  3. Sauté the Onions: In the same skillet, add the chopped onions. Sauté for about 5 minutes until they become soft and develop a light golden color, which adds depth to the sauce.
  4. Make the Boursin Sauce: Pour in the chicken broth and fresh lemon juice, then add the softened Boursin cheese. Stir continuously until the cheese has completely melted and the sauce is smooth. Allow the sauce to simmer and bubble gently for 4-5 minutes to thicken slightly. Stir in the chopped parsley for freshness.
  5. Finish Cooking the Salmon: Return the seared salmon pieces to the skillet with the sauce. Lower the heat and cook for an additional 3-5 minutes, or until the salmon is cooked through and flakes easily with a fork. The sauce will thicken further during this time.
  6. Season and Serve: Taste the dish and adjust seasoning with additional salt and pepper if needed. Serve the Boursin salmon immediately while hot for the best flavor and texture.

Notes

  • Bringing salmon to room temperature before cooking helps it cook more evenly.
  • Do not overcook the salmon initially; finishing cooking in the sauce ensures it remains moist.
  • Using low-sodium chicken broth helps control the salt level in the dish.
  • Softening the Boursin cheese before adding it makes the sauce smoother and easier to blend.
  • Leftover salmon and sauce can be refrigerated for up to 2 days but is best enjoyed fresh.
