Brazilian Brigadeiros are classic chocolate truffles made with sweetened condensed milk, cocoa powder, and butter, resulting in a rich, fudgy, and indulgent treat. Coated in chocolate sprinkles, these bite-sized sweets are perfect for celebrations or as a delicious dessert.

Ingredients

Brigadeiro Mixture

  • 1 14-ounce can sweetened condensed milk
  • ¼ cup pure cocoa powder
  • 2 tablespoons butter
  • ⅛ teaspoon salt
  • ¼ cup semi sweet chocolate chips

Coating

  • 1 cup chocolate jimmies sprinkles
  • Butter or oil for rolling hands

Instructions

  1. Combine ingredients: In a medium non-stick saucepan over medium-low heat, add the sweetened condensed milk, butter, cocoa powder, and salt. Stir continuously to blend the ingredients smoothly and prevent sticking.
  2. Cook mixture: Bring the mixture to a low simmer and cook for 5 to 10 minutes, stirring constantly. The brigadeiro is ready when you can drag a spatula or spoon across the bottom of the pan leaving a clear line that does not immediately fill back in.
  3. Add chocolate chips: Remove from heat and stir in the semi sweet chocolate chips until fully melted and incorporated into the mixture.
  4. Cool mixture: Transfer the brigadeiro mixture to a large non-stick bowl or a bowl lined with parchment paper. Cover and let it cool to room temperature, about 30 minutes, until it thickens enough to shape.
  5. Shape truffles: Lightly grease your hands with butter or oil, then scoop tablespoon-sized portions of the mixture and roll them into smooth balls.
  6. Coat with sprinkles: Roll each ball in chocolate jimmies sprinkles, pressing gently to adhere the coating.
  7. Serve: Place the brigadeiros in mini muffin liners or candy cups. Serve at room temperature or chilled according to your preference.

Notes

  • Ensure constant stirring during cooking to prevent the mixture from burning or sticking.
  • If the mixture is too sticky after cooling, refrigerate for an additional 10-15 minutes to firm it up for rolling.
  • For variation, try rolling brigadeiros in crushed nuts, shredded coconut, or colored sprinkles.
  • Store brigadeiros in an airtight container at room temperature or refrigerated for up to 3 days.
  • Use a non-stick pan for easier cooking and cleanup.
