Ingredients

Tomato Mixture

  • 4 Roma tomatoes, cored and diced
  • 1/4 cup basil leaves, chopped
  • 1 garlic clove, minced
  • 1 Tablespoon extra virgin olive oil
  • 1-2 teaspoons balsamic vinegar
  • Salt, to taste

Cheese Dip

  • 8 oz feta cheese block, crumbled
  • 1/2 block cream cheese (4 oz)
  • 1/2 cup sour cream
  • 1 garlic clove, minced
  • 1 Tablespoon freshly squeezed lemon juice
  • 1 Tablespoon olive oil
  • Salt, to taste

Toppings and Serving

  • More basil leaves, chopped
  • Red pepper flakes, to taste
  • Parmesan cheese, freshly grated
  • Crackers, pita chips, or toasted bread, for serving

Instructions

  1. Prepare the tomatoes: Core and dice the Roma tomatoes into small cubes to ensure they mix well in the dip.
  2. Mix tomato ingredients: In a medium bowl, combine the diced tomatoes, chopped basil, minced garlic, extra virgin olive oil, balsamic vinegar, and salt. Toss gently to coat the tomatoes evenly.
  3. Marinate the tomato mixture: Set the tomato mixture aside for 10 minutes to let the flavors meld together, enhancing the taste of the bruschetta.
  4. Prepare cheese dip base: While the tomatoes marinate, add the feta cheese, cream cheese, sour cream, minced garlic, lemon juice, olive oil, and salt into the bowl of your food processor.
  5. Blend cheese mixture: Puree the cheese ingredients for 3-4 minutes until smooth and creamy, scraping down the sides of the bowl as needed to ensure an even texture.
  6. Assemble the dip: Scoop the smooth cheese mixture onto a shallow serving plate or bowl, creating a base layer for the bruschetta topping.
  7. Add bruschetta topping: Spoon the marinated tomato mixture evenly over the cheese layer.
  8. Garnish and finish: Sprinkle the top with red pepper flakes, freshly grated Parmesan cheese, and additional chopped basil leaves for extra flavor and color.
  9. Serve: Present the bruschetta dip with a selection of crackers, pita chips, or toasted bread for dipping and enjoying.
