Ingredients

Roasted Tomato Mixture

  • 12 ounces cherry tomatoes
  • 3 cloves garlic, peeled
  • 2 tablespoons avocado oil
  • 2 tablespoons balsamic vinegar
  • Salt & pepper, to taste

Sautéed Spinach

  • 0.5 tablespoon avocado oil
  • 3 handfuls spinach
  • Salt & pepper, to taste

Flatbread Assembly

  • 1 pre-made flatbread dough
  • 6 ounces dairy-free Boursin cheese
  • 2 tablespoons fresh basil, chopped (plus more for serving)
  • Red pepper flakes (optional)

Instructions

  1. Preheat Oven and Prepare Baking Dish: Preheat your oven to 400°F (200°C) and line a baking dish with parchment paper to prepare for roasting the tomatoes.
  2. Roast Tomatoes and Garlic: In the lined baking dish, combine the cherry tomatoes, whole garlic cloves, 2 tablespoons of avocado oil, balsamic vinegar, and a pinch of salt and pepper. Toss to coat everything evenly. Roast in the oven for 20-25 minutes, until the tomatoes are bursting and soft. Remove from the oven and roughly chop the roasted garlic.
  3. Sauté Spinach: While the tomatoes roast, heat the remaining 0.5 tablespoon of avocado oil in a skillet over medium heat. Add the spinach along with a pinch of salt and pepper. Cook until the spinach is wilted, then remove from heat and set aside.
  4. Assemble Flatbread: Place the pre-made flatbread dough on a baking sheet. Spread the dairy-free Boursin cheese evenly over the surface. Evenly distribute the sautéed spinach, chopped roasted garlic, chopped fresh basil, and the burst roasted tomatoes on top. Reserve the juices left in the tomato baking dish for serving.
  5. Bake the Flatbread: Bake the assembled flatbread in the oven for 8 minutes, or until the cheese is melted and the crust is crispy and golden.
  6. Finish and Serve: Remove the flatbread from the oven and slice it into portions. Drizzle with the reserved tomato juices, sprinkle with red pepper flakes if desired, and garnish with additional fresh basil. Serve immediately and enjoy!

Notes

  • Use a dairy-free Boursin to keep this recipe vegan and dairy-free.
  • Pre-made flatbread dough simplifies preparation but you can substitute with naan or pita bread if preferred.
  • Keep the juices from the roasted tomatoes to drizzle over flatbread for extra flavor and moisture.
  • Adjust red pepper flakes according to your spice preference.
