Delight in these decadent Cannoli Pancakes, a creative fusion of classic Italian cannoli flavors with fluffy, buttery pancakes. Stuffed with a sweet ricotta and chocolate chip filling, and topped with cinnamon, nutmeg, powdered sugar, whipped cream, and more chocolate chips, this recipe makes a perfect indulgent breakfast or brunch treat.

Ingredients

Filling

  • 2 cups heavy cream
  • 1/3 cup powdered sugar, plus more for garnish
  • 1 teaspoon cinnamon
  • Pinch of nutmeg
  • 1 cup ricotta cheese
  • 1 cup mini chocolate chips, plus more for topping

Pancakes

  • 1 box Bisquick pancake mix, plus ingredients called for on box (generally milk and eggs)
  • 1 cup mini chocolate chips
  • 1 tablespoon butter for cooking

Garnish

  • Powdered sugar for dusting
  • Whipped cream
  • Additional mini chocolate chips

Instructions

  1. Prepare the filling: In a large bowl, use a hand mixer to beat together the heavy cream, 1/3 cup powdered sugar, cinnamon, and nutmeg until stiff peaks form. Gently fold in the ricotta cheese and 1 cup of mini chocolate chips. Set this mixture aside for later.
  2. Make the pancake batter: Prepare the pancakes according to the instructions on the Bisquick box, incorporating 1 cup of mini chocolate chips into the batter for extra chocolatey goodness.
  3. Cook the pancakes: Heat the butter in a large skillet over medium heat. Pour the batter to make large pancakes. Once cooked on one side, flip and cook until golden and cooked through.
  4. Stuff the pancakes: Place about 1/2 cup of the ricotta filling onto one side of a pancake. Fold the pancake in half like a taco to encase the filling.
  5. Garnish and serve: Dust the stuffed pancakes with powdered sugar, add a dollop of whipped cream, and sprinkle additional mini chocolate chips on top. Serve immediately and enjoy!

Notes

  • For best results, use fresh, whole milk ricotta cheese for a creamy filling.
  • Adjust the amount of powdered sugar to taste, especially if you prefer a less sweet filling.
  • These pancakes are best served immediately to enjoy the contrast of warm pancakes and cool ricotta filling.
  • You can substitute Bisquick with your favorite pancake mix and adjust the liquid ingredients accordingly.
  • If you want to make them ahead, prepare the filling and pancakes separately and assemble before serving, warming pancakes slightly if needed.
