A simple and flavorful side dish featuring caramelized green cabbage and onions, sautéed with garlic, nutmeg, and a touch of heat from crushed red pepper flakes. This recipe creates tender, golden-brown vegetables perfect to accompany any meal.

Ingredients

Vegetables

  • 1 head green cabbage, halved, cored, and thinly sliced
  • 1 medium yellow onion, cut in half and thinly sliced
  • 3 garlic cloves, minced

Seasonings

  • 1 tablespoon extra virgin olive oil
  • 1/2 - 3/4 teaspoon kosher salt, to taste
  • 1/8 - 1/4 teaspoon crushed red pepper flakes, to taste
  • 1/4 - 1/2 teaspoon ground nutmeg, to taste
  • 2 tablespoons minced flat-leaf parsley

Instructions

  1. Heat the oil: Heat 1 tablespoon of extra virgin olive oil over medium-high heat in a large nonstick or ceramic skillet (or a braiser pan with high sides). If those aren't available, use a large saucepan.
  2. Add cabbage and onions: Add the thinly sliced cabbage and onions to the skillet. The pan will be very full initially, but the cabbage will cook down quickly. Use tongs to toss the vegetables with the olive oil to coat them evenly.
  3. Cook until manageable: As the cabbage softens and reduces in volume, use a wooden spoon or spatula to stir, scraping up any browned bits from the bottom of the pan to enhance flavor.
  4. Season: After about 10 minutes of cooking, stir in kosher salt and crushed red pepper flakes to taste.
  5. Continue caramelizing: Keep cooking the vegetables, stirring very frequently and scraping the pan bottom to encourage caramelization, until the cabbage and onions turn a golden brown, approximately 20 minutes total.
  6. Add garlic and nutmeg: Stir in the minced garlic and ground nutmeg, cooking for an additional 1 minute to release their flavors.
  7. Finish with parsley and serve: Stir in 2 tablespoons of minced flat-leaf parsley and serve the caramelized cabbage and onions warm.

Notes

  • Using a skillet with high sides or a braiser pan helps contain the cabbage as it cooks down.
  • Be patient while caramelizing—the slow cooking and frequent stirring develop deep, sweet flavors.
  • Adjust crushed red pepper flakes and nutmeg to your taste preferences for mild or more pronounced spice and warmth.
  • This dish pairs well with roasted meats, grilled vegetables, or as a hearty side for vegetarian meals.
