Delightfully warm and comforting, these Chai-Spiced Sweet Potato Pancakes combine the natural sweetness of sweet potatoes with aromatic chai spices like cinnamon, cardamom, ginger, and cloves. Perfect for a cozy breakfast or brunch, these pancakes are fluffy, flavorful, and lightly sweetened with pure maple syrup, making them a wholesome and delicious start to your day.

Ingredients

Dry Ingredients

  • 1 cup white whole wheat flour or whole wheat pastry flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon ginger
  • Pinch of cloves

Wet Ingredients

  • 1 cup unsweetened almond milk, plus more if necessary
  • 1 egg, lightly beaten
  • 1 tablespoon olive oil (or substitute melted butter)
  • 1 tablespoon pure maple syrup
  • 2 teaspoons vanilla extract
  • 3/4 cup mashed, cooked sweet potato (about 2 medium sweet potatoes)

Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together the whole wheat flour, baking powder, salt, cinnamon, cardamom, ginger, and cloves until well combined.
  2. Prepare Wet Mixture: In a medium bowl, combine the unsweetened almond milk, lightly beaten egg, olive oil, pure maple syrup, vanilla extract, and mashed sweet potato. Whisk them together until the mixture is smooth and uniform.
  3. Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and gently stir until just combined. The batter will be thick; if it appears too thick to scoop, add one or two tablespoons of almond milk until the batter reaches a thick but manageable consistency.
  4. Heat Skillet: Lightly coat a large nonstick skillet or griddle with olive oil and heat it over medium heat for a minute or two until hot.
  5. Cook Pancakes: Using a 1/4 cup measuring cup, drop batter onto the skillet. Cook for about 2 minutes, or until bubbles form on top of the pancake and edges start to set.
  6. Flip and Finish Cooking: Carefully flip each pancake and cook for another 2 minutes, or until golden brown on the underside. Adjust heat to medium-low if pancakes start to burn.
  7. Repeat: Wipe the skillet clean if necessary, re-oil lightly, and repeat with remaining batter until all pancakes are cooked. This recipe makes about 8 pancakes (roughly 4 servings, 2 pancakes each).

Notes

  • Feel free to substitute almond milk with any other plant-based or dairy milk of your choice.
  • For a vegan version, replace the egg with a flax egg or mashed banana, and use melted vegan butter instead of olive oil if preferred.
  • Ensure sweet potatoes are well mashed for the best texture in the batter.
  • If you want a thinner pancake, gradually add almond milk to reach your desired consistency.
  • Serve pancakes warm with extra maple syrup, nuts, or fresh fruit for a complete meal.
