Ingredients

Meat Mixture

  • 1 Pound Lean Ground Beef
  • 1/2 White Onion, diced
  • 1/2 Teaspoon Garlic Powder
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 2 Teaspoons Worcestershire Sauce

Other Ingredients

  • 32 Ounce Package Frozen Tater Tots
  • 1/3 Cup Sour Cream
  • 1 10 Ounce Can Condensed Cheddar Cheese Soup
  • 1 10 Ounce Can Cream of Mushroom or Chicken Soup
  • 2 Cups Shredded Cheddar Cheese, divided
  • 1 15.2 Ounce Can Corn, drained
  • 1 14.5 Ounce Can Green Beans, drained

Instructions

  1. Preheat and prepare pan: Preheat the oven to 350°F. Grease a 9x13 inch baking dish with non-stick cooking spray and set aside to prevent sticking.
  2. Cook ground beef mixture: In a large skillet over medium heat, brown the ground beef along with the diced onion, garlic powder, salt, pepper, and Worcestershire sauce. Cook until the beef is no longer pink, breaking it up as it cooks. Drain excess grease if needed.
  3. Mix casserole base: In a large bowl, combine the cooked ground beef mixture with the sour cream, condensed cheddar cheese soup, cream of mushroom or chicken soup, drained corn, drained green beans, and 1 cup of shredded cheddar cheese. Stir until all ingredients are well incorporated.
  4. Assemble casserole: Spread the beef and soup mixture evenly into the prepared baking dish. Arrange an even layer of frozen tater tots over the top.
  5. Bake casserole: Place the casserole in the preheated oven and bake for 50 minutes, or until the tater tots are golden brown and the casserole is bubbly.
  6. Add cheese topping: Remove the casserole from the oven and sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top. Return it to the oven and bake for an additional 5 minutes, until the cheese has melted.
  7. Serve: Allow the casserole to cool slightly before serving. Enjoy a warm, hearty meal packed with cheesy, savory flavors.

Notes

  • You can substitute cream of chicken soup with cream of mushroom or vice versa based on preference.
  • For a lower fat version, use lean ground turkey instead of beef and low-fat sour cream.
  • Make sure to drain the canned vegetables to avoid a watery casserole.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • Adding chopped bell peppers or mushrooms in the ground beef mixture can boost nutrition and flavor.
