Ingredients

Protein

  • 1 ½ pounds boneless skinless chicken thighs, cut into 1-inch pieces

Vegetables

  • 1 small red onion, cut into 1-inch pieces
  • 1 red bell pepper, cut into 1-inch pieces
  • 2 carrots, peeled and cut into 1/4-inch pieces (about 1 cup)
  • 15 ounce can chickpeas, rinsed and drained

Spices & Seasonings

  • 1 tablespoon extra virgin olive oil
  • 1 ½ teaspoons smoked paprika
  • 1 ½ teaspoons cumin
  • ½ teaspoon red pepper flakes (optional)
  • ¾ teaspoon garlic powder
  • ¾ teaspoon onion powder
  • ¾ teaspoon dried oregano
  • ½ teaspoon ground cinnamon
  • 1 ½ teaspoon kosher salt

Accompaniment

  • Tzatziki sauce, for serving

Instructions

  1. Preheat Oven: Preheat your oven to 425° F to ensure a hot environment for roasting the chicken and vegetables evenly and quickly.
  2. Prepare Ingredients: In a large mixing bowl, combine the chicken pieces, red onion, red bell pepper, carrots, and chickpeas. Drizzle the olive oil over the mixture and sprinkle on all the spices including smoked paprika, cumin, red pepper flakes (if using), garlic powder, onion powder, dried oregano, ground cinnamon, and kosher salt. Toss everything thoroughly to coat the chicken and veggies evenly with the oil and spices.
  3. Arrange on Baking Sheet: Transfer this seasoned mixture to a rimmed baking sheet, spreading it out into an even layer to promote uniform roasting.
  4. Roast the Dinner: Place the baking sheet in the oven and roast for 30 to 35 minutes, until the chicken is cooked through and the vegetables are tender. For extra texture and flavor, broil the dish for the last 2 minutes to achieve a nice charred finish.
  5. Serve: Remove the sheet pan from the oven and serve the chicken shawarma mixture hot, accompanied by tzatziki or your choice of white sauce for a delicious and refreshing contrast.

Notes

  • Red pepper flakes are optional and can be adjusted or omitted depending on your preferred spice level.
  • Using boneless skinless chicken thighs keeps the meat juicy and tender during roasting.
  • Broiling at the end enhances the caramelization and adds a smoky flavor to the dish.
  • Tzatziki sauce can be homemade or store-bought for convenience.
  • If you prefer a lower sodium version, reduce the amount of kosher salt or use a salt substitute.
