This Chicken Stroganoff is a creamy, comforting dish featuring tender strips of chicken breast cooked with mushrooms, onions, and a rich sour cream sauce. Perfectly balanced with dijon mustard, Worcestershire, and soy sauce for depth, it's a delicious twist on the classic beef stroganoff that can be served over egg noodles for a satisfying meal.

Ingredients

Chicken and Butter

  • 3 tbsp butter (divided)
  • 1½ lbs boneless skinless chicken breasts (sliced into small strips)
  • 1 tsp salt (divided)
  • ¼ tsp pepper

Vegetables

  • ½ onion (chopped)
  • 1 lb cremini mushrooms (sliced)
  • 2 cloves garlic (minced)

Sauce Ingredients

  • 2 tbsp flour
  • 1 tsp dijon mustard
  • 2 tsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 15 oz beef broth (or chicken broth)
  • ⅓ cup sour cream

Instructions

  1. Brown the Chicken: Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the sliced chicken, sprinkle with ½ teaspoon salt and pepper, and cook until browned on all sides. Once browned, transfer the chicken to a plate and set aside.
  2. Sauté Vegetables: In the same pan, melt the remaining 1 tablespoon of butter. Add the chopped onion and sliced mushrooms, sprinkle with the remaining ½ teaspoon salt, and cook until they soften and the excess liquid evaporates. Stir in the minced garlic and cook for an additional minute to release its flavor.
  3. Build the Sauce Base: Stir in the flour, dijon mustard, Worcestershire sauce, and soy sauce into the vegetables, ensuring everything is well combined to form a flavorful base.
  4. Add Broth and Simmer: Pour in the beef broth and stir thoroughly. Bring the mixture to a boil, then reduce the heat to a simmer. Let it cook for about 10 minutes, stirring occasionally, until the sauce thickens to a creamy consistency.
  5. Finish with Sour Cream: Remove the pan from heat and gently stir in the sour cream, incorporating it fully to create a rich and smooth sauce.
  6. Serve: Adjust seasoning with salt and pepper to taste. Serve the stroganoff over egg noodles or stir the noodles directly into the sauce for a hearty meal.

Notes

  • Using cremini mushrooms adds a nice earthiness, but button mushrooms can be substituted.
  • For a dairy-free version, substitute sour cream with coconut cream or a non-dairy alternative.
  • If you prefer a thicker sauce, add an extra tablespoon of flour during the sauce-building step.
  • To elevate flavor, consider adding fresh parsley or dill as a garnish before serving.
  • Ensure not to boil the sauce after adding sour cream to prevent curdling.
