Ingredients
Salad Ingredients
2 15-ounce cans chickpeas, rinsed and drained
3 avocados, diced
2 tablespoons shallots, minced
2 jalapenos, seeded and diced
1/4 cup cotija cheese, crumbled (or feta)
2 tablespoons cilantro, chopped
Dressing Ingredients
2 limes, juiced
2 tablespoons extra virgin olive oil
1 teaspoon kosher salt
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper (optional)
Instructions
Prepare the dressing: In a small bowl, whisk together the lime juice, extra virgin olive oil, kosher salt, ground cumin, and cayenne pepper (if using) until fully combined and emulsified.
Combine salad ingredients: In a large bowl, add the rinsed and drained chickpeas, diced avocados, diced jalapenos, and minced shallots. Gently pour the prepared dressing over the mixture and toss gently to ensure all ingredients are evenly coated without mashing the avocado.
Finish and serve: Sprinkle crumbled cotija cheese and chopped cilantro over the top of the salad. Serve immediately for the freshest flavor and texture.
Notes
For a spicier salad, leave the jalapeno seeds in or add extra cayenne pepper to the dressing.
Use feta cheese as a substitute for cotija if unavailable.
This salad is best served fresh to prevent the avocado from browning.
Leftovers can be stored in an airtight container in the refrigerator for up to 1 day.
Optionally, add chopped tomatoes or bell peppers for extra color and flavor.
