This dish offers a perfect balance of spicy, sweet, and zesty flavors, with a quick and easy stovetop cooking process ideal for a nutritious weeknight meal.

Ingredients

Salmon Bites

  • 2 pounds salmon, cut into chunks
  • 1 ½ tablespoons Tajín seasoning (or any chili lime seasoning)
  • 1 tablespoon avocado oil
  • ¼ cup water
  • 3 tablespoons honey
  • Herby summer sauce (optional)
  • Jasmine rice (optional)

Mango Slaw

  • 1 small cabbage, thinly sliced
  • 1 mango, thinly sliced
  • ½ red onion, thinly sliced
  • ½ cup fresh cilantro, plus more for sprinkling
  • 3 tablespoons freshly squeezed lime juice
  • 3 tablespoons olive oil
  • Kosher salt and pepper, to taste

Instructions

  1. Season the Salmon: Generously season the salmon chunks all over with the Tajín seasoning, adding more if you prefer a stronger chili lime flavor.
  2. Cook the Salmon: Heat the avocado oil in a large cast iron skillet over medium heat. Arrange the salmon pieces in a single layer (you may need to cook in batches). Cook each side for 2 to 3 minutes until golden brown and cooked through.
  3. Prepare Honey Glaze: In a small bowl, whisk together the honey and water until combined. Pour this mixture into the skillet with the salmon and let it bubble and simmer for 1 to 2 minutes to create a flavorful glaze. Then remove from heat.
  4. Make the Mango Slaw: In a large bowl, combine the thinly sliced cabbage, mango, red onion, and cilantro. Whisk together the lime juice, olive oil, and a big pinch of salt and pepper. Pour the dressing over the slaw and toss well. Let it sit for 5 minutes, then toss again to evenly distribute the flavors.
  5. Serve: Plate the salmon bites over a bed of the mango slaw. Optionally, add jasmine rice on the side and drizzle with herby summer sauce. Garnish with additional fresh cilantro before serving.

Notes

  • Tajin seasoning can be substituted with any chili lime seasoning or a mix of chili powder and lime zest.
  • Cooking salmon in batches ensures even searing and prevents overcrowding the pan.
  • The mango slaw can be made ahead and refrigerated for up to 2 hours for the flavors to meld.
  • For a low-carb option, serve without jasmine rice.
  • Use fresh, ripe mango for the best sweetness in the slaw.
