A flavorful Chipotle Ranch Grilled Chicken Burrito recipe that combines tender grilled chicken with zesty flamethrower sauce, fresh vegetables, and melted cheese, all wrapped in warm tortillas and pan-toasted to crispy perfection. Perfect for a quick and satisfying meal with smoky, spicy, and creamy elements.

Ingredients

Chicken

  • 3 cups grilled and diced chicken (about 4 tenderloins or 2 small chicken breasts)

Fillings and Sauce

  • 1/3 cup diced tomatoes
  • 4 tbsp flamethrower sauce (or chipotle ranch)
  • 1/2 avocado, diced (approximately 1/3 cup)
  • 2/3 cup shredded lettuce
  • 1/3 cup shredded cheddar cheese
  • 1/4 cup fiesta strips or crushed tortilla chips

Other

  • 2 burrito-sized tortillas
  • Oil, for pan heating (amount as needed)

Instructions

  1. Grill and Prepare Chicken: Grill the chicken breasts or tenderloins until fully cooked, then dice into bite-sized pieces. Alternatively, use leftover or rotisserie chicken for convenience. While the chicken cooks, dice the avocado and tomatoes and shred the lettuce to prepare other ingredients.
  2. Mix Ingredients: In a large bowl, combine the grilled chicken, diced tomatoes, avocado, shredded lettuce, fiesta strips or crushed tortilla chips, shredded cheddar cheese, and flamethrower sauce. Toss thoroughly to ensure everything is evenly coated with the sauce.
  3. Assemble Burritos: Heat a pan over medium heat with a small amount of oil. Lay out each tortilla and spoon half of the chicken mixture onto the center. Fold the opposite sides of the tortilla inward, then roll tightly around the filling, keeping the seam side down to prevent unrolling.
  4. Seal and Toast Burritos: Place a small amount of shredded cheddar cheese along the inside seam of the folded tortilla. Carefully transfer the burrito seam-side down onto the heated pan. Cook for 1-2 minutes on each side, or until the tortilla is golden brown and the cheese melts, pressing gently on top to flatten slightly for easier eating.

Notes

  • You can substitute the flamethrower sauce with chipotle ranch or any spicy creamy sauce of your choice.
  • Leftover grilled chicken or rotisserie chicken works perfectly for this recipe, making it quick and easy.
  • Use fiesta strips or tortilla chips for added crunch inside the burrito.
  • Pressing down gently when toasting helps seal the burrito and crisp the tortilla evenly.
  • Serve immediately while warm to enjoy the melted cheese and crispy tortilla texture.
