Delicious and easy-to-make Chocolate Chip Protein Cookies packed with peanut butter and protein powder, perfect for a quick snack or post-workout treat. These cookies are soft, chewy, and rich in flavor, with a great balance of sweetness and protein to keep you satisfied.

Ingredients

Wet Ingredients

  • 2 eggs
  • 2/3 cup unsalted peanut butter
  • 1/2 cup granulated sugar (white, coconut, brown, etc.)
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1/2 cup vanilla protein powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt (omit if peanut butter was salted)

Add-ins

  • 1/2 cup chocolate chips

Instructions

  1. Preheat the Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) to prepare for baking the cookies.
  2. Prepare Baking Sheet: Line a baking sheet with parchment paper to prevent the cookies from sticking and to facilitate easy cleanup.
  3. Mix Wet Ingredients: In a mixing bowl, whisk together the eggs, peanut butter, sugar, and vanilla extract until the mixture is smooth and well combined.
  4. Incorporate Dry Ingredients: Fold in the vanilla protein powder, baking soda, and salt. The dough will become thick as these dry ingredients are incorporated.
  5. Add Chocolate Chips: Gently fold the chocolate chips into the dough, ensuring they are evenly distributed.
  6. Scoop and Shape Cookies: Use a 2-tablespoon scoop to portion the dough, roll into balls, and flatten them on the prepared baking sheet. The cookies will not spread much during baking, so shape them roughly as you want them to look.
  7. Bake: Bake the cookies in the preheated oven for 8 to 12 minutes, ideally around 10 minutes depending on your desired texture. The cookies will firm up as they cool.
  8. Cool: Let the cookies cool on the baking sheet for 20 minutes before enjoying. This allows them to set perfectly.

Notes

  • You can substitute peanut butter with any nut or seed butter, but adjust salt accordingly.
  • Use your choice of granulated sugar: white, coconut, or brown to slightly alter the sweetness and flavor.
  • Omitting salt is advised if using salted peanut butter to avoid oversalting.
  • For a dairy-free version, use vegan protein powder and ensure chocolate chips are dairy-free.
  • Cookies will firm up as they cool; avoid overbaking to keep them soft and chewy.
