Ingredients

Batter:

  • 1/4 cup canola oil (or avocado oil)
  • 1/4 cup softened butter
  • 1 cup granulated sugar
  • 2 eggs (at room temperature)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk (or 1/2 cup milk + 1/2 teaspoon white vinegar)
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon molasses

Cinnamon Batter Swirl:

  • 1/2 cup prepared batter (reserved)
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon molasses

Coating:

  • 1/2 cup butter (melted)
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly grease a light-colored loaf pan using non-stick cooking spray to prevent sticking, then set it aside.
  2. Mix Wet Ingredients: In a large bowl, use an electric stand mixer to blend canola oil, softened butter, and granulated sugar until the mixture is smooth and well combined. Add the eggs and vanilla extract, mixing until the batter is silky.
  3. Combine Dry Ingredients and Buttermilk: Gently fold in the all-purpose flour, baking powder, salt, and buttermilk into the wet mixture, stirring until the batter is uniform without lumps. Scrape down the bowl edges as needed.
  4. Prepare Cinnamon Swirl Batter: Remove about half a cup of the batter and place it in a smaller bowl. Stir in ground cinnamon and molasses thoroughly to create the cinnamon cinnamon swirl batter.
  5. Layer Batters in Pan: Pour half of the plain batter into the bottom of the prepared loaf pan. Spoon half of the cinnamon batter in small dollops on top. Then drizzle the remaining plain batter over that, and dot the top with remaining cinnamon batter dollops.
  6. Swirl the Batters: Using a butter knife, gently swirl the plain and cinnamon batters together in the pan to create a marbled effect without overmixing.
  7. Bake: Place the loaf pan in the oven and bake for 45-50 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs but not wet batter.
  8. Prepare Cinnamon Sugar Coating: While baking, pour the melted butter into a large shallow dish. In a separate shallow dish, mix together granulated sugar, brown sugar, and ground cinnamon for the coating.
  9. Cool and Remove: After baking, allow the loaf to cool for 10 minutes in the pan. Then loosen the edges and carefully remove the warm loaf from the pan.
  10. Coat the Loaf: Dip each side of the warm loaf into the melted butter until fully coated. Spoon any remaining melted butter over edges that look particularly crispy to keep them moist.
  11. Add Cinnamon Sugar: Transfer the butter-coated loaf into the cinnamon sugar mixture and press gently into the sides and top to ensure the loaf is evenly coated.
  12. Serve: Slice the loaf and serve it warm or at room temperature for a delicious cinnamon-sugar bread experience.

Notes

  • Substitute buttermilk with milk plus white vinegar if needed.
  • Use light-colored loaf pans to prevent overbrowning.
  • Ensure eggs are at room temperature for smoother batter.
  • For best results, use fresh cinnamon for maximum flavor.
  • Store leftovers wrapped tightly to maintain moistness.
  • Reheat slices slightly before serving to enjoy the buttery coating fully.
