Ingredients

Bread

  • 1/2 cup Honey Cinnamon Butter (softened to room temp, recipe included below)
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 20 ounces Crushed pineapple
  • 2 ½ cups All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1/4 cup Brown sugar
  • 3/4 cup Granulated sugar
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Salt

Honey Cinnamon Glaze

  • 1/2 cup Honey Cinnamon Butter (melted, recipe included below)
  • 3/4 cup Powdered sugar
  • 1/2 teaspoon Ground cinnamon
  • 2 tablespoons Milk (or more as needed)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 375°F. Lightly grease a 9-inch loaf pan with nonstick cooking spray or line it with parchment paper to ensure easy bread removal.
  2. Mix Wet Ingredients: In a large bowl, beat ½ cup softened honey cinnamon butter together with brown sugar and granulated sugar until well combined and creamy. Add in the eggs one at a time, then stir in vanilla extract. Fold in the crushed pineapple until fully incorporated.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, and salt to evenly distribute the leavening agents and spices.
  4. Make the Batter: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined without overmixing to keep the bread tender.
  5. Pour and Smooth Batter: Transfer the batter into the prepared loaf pan and smooth the top with a spatula for even baking.
  6. Bake: Place the loaf in the preheated oven and bake for 50 to 60 minutes, or until the top springs back when lightly pressed and a toothpick inserted into the center comes out clean.
  7. Cool the Bread: Remove the bread from the oven and allow it to cool completely in the pan before turning it out onto a cutting board or plate.
  8. Prepare the Honey Cinnamon Glaze: In a small bowl, whisk together the melted honey cinnamon butter and powdered sugar. Blend in ground cinnamon and add milk one tablespoon at a time until the glaze reaches your desired consistency.
  9. Glaze the Bread: Drizzle some of the glaze over the cooled bread. Serve the remaining glaze on the side for extra sweetness.
  10. Serve: Once the glaze is set, slice the bread and enjoy your delicious cinnamon pineapple treat.

Notes

  • Ensure the honey cinnamon butter is softened for the batter and melted for the glaze—this helps achieve the right texture.
  • Check doneness by inserting a toothpick; it should come out clean when the bread is fully baked.
  • Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • For a tropical twist, consider adding chopped nuts like macadamia or walnuts to the batter.
  • If you prefer a stronger cinnamon flavor, feel free to increase the ground cinnamon slightly in both the bread and glaze.
