These Cookie Monster Ice Cream Sandwiches combine homemade vanilla ice cream swirled with crunchy crushed Oreos and chocolate chip cookies, all sandwiched between soft chewy chocolate chip cookies. A delightful treat that is creamy, crunchy, and perfect for summer indulgence.

Ingredients

Ice Cream Base

  • 3/4 cup whole milk
  • 1/2 cup sugar
  • 1-1/2 cups heavy cream
  • 1/2 tbsp vanilla extract

Mix-ins

  • 10 Oreos, crushed
  • 10 crunchy chocolate chip cookies, crushed (regular Chips Ahoy recommended)

Assembly

  • 24 soft chocolate chip cookies (chewy Chips Ahoy recommended)

Instructions

  1. Prepare the Ice Cream Mixture: In a medium-sized bowl, stir together the whole milk and sugar for about 3 minutes until the sugar is completely dissolved. Then add the heavy cream and vanilla extract, mixing until fully combined.
  2. Churn the Ice Cream: Pour the prepared mixture into the ice cream maker (make sure it's pre-frozen for at least 24 hours). Allow the machine to run according to the manufacturer's instructions.
  3. Add Crushed Cookies: About 3 minutes before the ice cream is done churning, add nearly all of the crushed Oreos and crunchy chocolate chip cookies. Reserve a small handful of the crushed cookies for topping later.
  4. Freeze Ice Cream: Transfer the churned ice cream into a 9x13-inch pan. Sprinkle the remaining crushed cookies on top, cover with plastic wrap, and place in the freezer for a few hours until fully hardened.
  5. Cut Ice Cream Rounds: Use a round cookie cutter approximately the same size as the soft chocolate chip cookies to cut circular portions of the set ice cream from the pan.
  6. Assemble Sandwiches: Sandwich each ice cream round between two soft chocolate chip cookies.
  7. Final Freeze and Serve: Return the assembled ice cream sandwiches to the freezer until ready to serve. Before enjoying, let the sandwiches sit at room temperature for about 5 minutes to soften slightly for optimal texture.

Notes

  • Ensure the ice cream maker bowl is frozen for at least 24 hours before use to achieve the best texture.
  • You can substitute crunchy chocolate chip cookies for any preferred brand, but maintaining crunchiness enhances texture.
  • Letting the sandwiches soften for a few minutes before eating improves the creaminess and bite.
  • Store the sandwiches in an airtight container in the freezer to avoid ice crystals forming.
