These Cottage Cheese Pancakes are a delightful twist on traditional pancakes, combining the creaminess of cottage cheese with a hint of cinnamon and vanilla. They are fluffy, protein-rich, and perfect for a quick and nutritious breakfast. Served with maple syrup and fresh berries, these pancakes make a comforting and wholesome start to your day.

Ingredients

Dry Ingredients

  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon cinnamon

Wet Ingredients

  • 1 cup cottage cheese (Good Culture 4%)
  • 2 large eggs
  • 1 Tablespoon maple syrup (plus more for topping)
  • 1 teaspoon vanilla extract
  • 1 Tablespoon almond milk (optional)

Instructions

  1. Mix Dry Ingredients: In a medium mixing bowl, combine the all-purpose flour, baking powder, and cinnamon, ensuring everything is evenly distributed.
  2. Blend Wet Ingredients: Add the cottage cheese, eggs, maple syrup, and vanilla extract to a blender or food processor and blend until the mixture is smooth and well combined. If a blender is not available, whisk the wet ingredients together thoroughly in a separate bowl.
  3. Combine Mixtures: Pour the blended wet ingredients into the bowl with the dry ingredients and stir well until just combined. If the batter feels too thick, mix in the optional almond milk to achieve a pourable consistency.
  4. Prepare Cooking Surface: Heat a pan or griddle over low to medium heat and lightly spray with non-stick cooking spray to prevent sticking.
  5. Cook Pancakes: Scoop about a quarter cup of batter per pancake onto the heated pan. If needed, use a spoon to spread the batter into a circle shape because the batter can be thick. Cook for 4-5 minutes or until small bubbles appear on the surface and edges become firm enough to lift with a spatula.
  6. Flip and Finish Cooking: Carefully flip each pancake and cook for another 2-3 minutes on the other side until golden and cooked through.
  7. Serve: Place four pancakes on each plate, drizzle generously with maple syrup, and add fresh berries or your favorite toppings for a delicious breakfast.

Notes

  • Using a blender makes the batter smoother and the pancakes fluffier, but whisking is an acceptable alternative.
  • If batter is too thick, adding almond milk helps to thin it out for easier pouring and cooking.
  • Cook pancakes on low to medium heat to avoid burning while ensuring they cook through.
  • Serve pancakes fresh and warm for the best texture and flavor.
  • This recipe yields about 8 pancakes, enough for 2 servings.
