Classic homemade Mac and Cheese recipe featuring creamy cheese sauce, perfectly cooked elbow macaroni, and a baked cheesy topping. This comforting dish is ideal for a quick family dinner, ready in just 30 minutes.

Ingredients

Pasta

  • 1/2 lb uncooked elbow macaroni (225 g)

Sauce

  • 3 tablespoons butter (43 g)
  • 2 tablespoons all-purpose flour (16 g)
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 1/2 cups milk, any kind (360 ml)
  • 3/4 cup half and half (180 ml)
  • 2 1/2 cups shredded cheddar cheese (250 g), divided

Instructions

  1. Preheat oven: Preheat the oven to 325 degrees F and lightly grease an 8-inch square (or similar size) baking dish to prepare it for baking the mac and cheese.
  2. Cook macaroni: Boil the elbow macaroni until al dente following package instructions, then drain and set aside to cool slightly.
  3. Make the cheese sauce: In a medium saucepan over medium heat, melt the butter. Stir in the flour, salt, and pepper and cook for 2 minutes to form a roux. Gradually whisk in the milk and half and half, stirring constantly and cooking over medium-low heat for 5 to 7 minutes until the mixture thickens to a gravy-like consistency. Remove from heat, then stir in 1 cup of shredded cheddar cheese until melted and smooth.
  4. Combine pasta and sauce: Add the cooked macaroni noodles to the cheese sauce and toss to coat evenly. Pour half of this mixture into the prepared baking dish. Sprinkle 1/2 cup of shredded cheese over the layer, then add the remaining pasta mixture on top and finish by sprinkling the remaining cheese evenly.
  5. Bake: Bake in the preheated oven for 15 to 20 minutes, or until the cheese topping is fully melted and slightly bubbling to achieve a creamy baked finish.

Notes

  • For a crispier top, broil for 2-3 minutes after baking, watching carefully to avoid burning.
  • Use sharp cheddar cheese for a stronger flavor, or mix in other cheeses like mozzarella or Parmesan for variety.
  • You can prepare the sauce and macaroni in advance and assemble just before baking to save time.
  • To make it gluten-free, substitute all-purpose flour with a gluten-free flour blend or cornstarch.
  • Optional toppings include breadcrumbs or crushed crackers for added texture.
