This creamy basil dressing is a vibrant and flavorful sauce perfect for salads, sandwiches, or as a dip. Made with fresh basil, Italian parsley, mayonnaise, and a hint of garlic, it combines creamy richness with herbaceous brightness. The dressing is easy to prepare in just 10 minutes using a food processor or immersion blender, resulting in a light green, smooth sauce that can elevate any dish.

Ingredients

For the Dressing

  • 1/4 cup mayonnaise
  • 1 cup fresh basil leaves, loosely packed
  • 1/2 cup Italian parsley leaves, loosely packed
  • 1 tablespoon distilled white vinegar
  • 1/2 clove garlic
  • 1/4 cup light oil (such as canola, grapeseed, or extra virgin olive oil)
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Combine Ingredients: Place mayonnaise, fresh basil leaves, Italian parsley leaves, distilled white vinegar, and garlic in a food processor or a narrow glass container suitable for an immersion blender. Pulse or blend until the mixture is well combined and the herbs are finely chopped.
  2. Drizzle in Oil: If using a food processor with a small opening, slowly drizzle the oil into the running processor. Continue blending until the dressing becomes completely smooth and takes on a light green color. This gradual incorporation of oil helps emulsify the dressing, giving it a creamy texture.
  3. Season and Chill: Add kosher salt and freshly ground black pepper to taste. Mix well. For best flavor, refrigerate the dressing for about 30 minutes before serving to allow the flavors to meld.

Notes

  • Use light oils such as canola or grapeseed to keep the dressing light, or choose extra virgin olive oil for a richer flavor.
  • The dressing can be stored in an airtight container in the refrigerator for up to 5 days.
  • To make the dressing vegan, substitute mayonnaise with a plant-based alternative.
  • Adjust the amount of garlic depending on your preference for pungency.
  • This dressing is excellent on green salads, as a sandwich spread, or as a dip for fresh vegetables.
