Ingredients

Chicken

  • 2 large boneless skinless chicken breasts
  • Salt & pepper (to taste)
  • Flour (for dredging)
  • 1 tablespoon olive oil
  • 2 tablespoons butter (divided)

Sauce

  • 1 whole head garlic (cloves peeled)
  • 1/2 cup chicken broth or stock
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1 cup heavy/whipping cream
  • Parsley (chopped, optional)

Instructions

  1. Prepare the chicken: Cut the chicken breasts in half lengthwise to create 4 smaller cutlets. Season them generously with salt and pepper, then dredge each piece lightly in flour, ensuring an even coating.
  2. Sauté the chicken: Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. When the pan is hot, add the chicken cutlets and cook for 4-5 minutes per side until golden brown. Remove the chicken from the pan and set aside.
  3. Cook the garlic: Reduce heat to medium or medium-low if using a cast iron skillet. Add the remaining tablespoon of butter to the pan and let it melt. Add the peeled garlic cloves and cook, stirring frequently, for 3-4 minutes until they turn lightly golden and fragrant.
  4. Deglaze and reduce: Pour in the chicken broth, lemon juice, and sprinkle in the garlic powder. Allow the mixture to bubble gently for about 4 minutes until the liquid has noticeably reduced, intensifying the flavor.
  5. Finish the sauce and chicken: Stir in the heavy cream and return the chicken cutlets to the pan. Simmer for an additional 5 minutes, letting the sauce reduce and thicken while ensuring the chicken is fully cooked through.
  6. Serve: Garnish with freshly chopped parsley if desired, and serve the creamy garlic chicken hot for a comforting and rich meal.

Notes

  • For extra flavor, you can roast the garlic cloves before adding to the sauce.
  • If you prefer a thicker sauce, let it simmer a little longer before adding the chicken back.
  • Serve with steamed vegetables, mashed potatoes, or over rice for a complete meal.
  • To make it dairy-free, substitute heavy cream with coconut cream and butter with olive oil.
