The beef is first seared for rich flavor, then slow-roasted or slow-cooked to perfection until it easily pulls apart. The mushrooms, onions, and drippings are whisked together into a savory gravy served over the roast, making a comforting, hearty main dish perfect for a family meal.

Ingredients

Beef and Seasoning

  • 5 pounds chuck roast
  • 1 tablespoon olive oil
  • 1 large yellow onion, chopped

Mushroom Mixture

  • 1 (454 grams) package white or cremini mushrooms

Sauce

  • 1 (1 ounce) package dry onion soup mix
  • 2 (10.75 ounces each) cans cream of mushroom soup
  • 1 1/4 cups water

Instructions

  1. Preheat the oven: Preheat your oven to 400 °F (204 °C) to prepare for searing and roasting the beef.
  2. Sear the roast: Heat a skillet or Dutch oven over medium heat with the olive oil. Brown the chuck roast on all sides to develop a rich crust and enhance flavor. Then transfer the roast into a Dutch oven or lidded roaster if not already in it.
  3. Add mushrooms and onions: Arrange the mushrooms and chopped onions evenly around the chuck roast inside the roaster.
  4. Prepare the sauce: In a bowl, whisk together the dry onion soup mix, cream of mushroom soups, and water until as smooth as possible, allowing for some slight chunkiness. Pour this mixture evenly over the roast, mushrooms, and onions.
  5. Start roasting high heat: Cover the roaster with a lid and place it in the preheated 400 °F oven. Roast for 20 minutes to kick-start cooking and meld flavors.
  6. Reduce temperature to slow cook: Lower the oven temperature to 325 °F (163 °C) and continue cooking for another 4 to 5 hours, or until the roast is fork-tender and pulls apart easily.
  7. Make gravy and serve: Remove the roast from the oven and plate it. Whisk together the mushrooms, onions, and drippings in the roaster to form a smooth gravy. Serve this flavorful gravy over slices of the beef chuck roast.
  8. Slow cooker method - sear: For slow cooker preparation, begin by heating a skillet over medium heat with olive oil. Brown the chuck roast on all sides and transfer it to the slow cooker pot.
  9. Slow cooker method - add vegetables: Place the mushrooms and chopped onions around the chuck roast inside the slow cooker.
  10. Slow cooker method - add sauce: Whisk together the dry onion soup mix, cream of mushroom soups, and water until smooth, then pour the mixture over the roast, mushrooms, and onions in the slow cooker. Cover with the slow cooker lid.
  11. Slow cook: Cook on low for 8 to 10 hours, or until the roast is tender and easily pulls apart when touched with a fork.
  12. Slow cooker method - finish and serve: Remove the beef from the slow cooker and plate it. Whisk the mushrooms, onions, and cooking juices in the slow cooker to create a rich gravy. Serve the gravy over the beef.

Notes

  • Browning the chuck roast before cooking adds depth and richness to the flavor.
  • You can use either white or cremini mushrooms depending on your preference.
  • The onion soup mix adds a savory and slightly tangy flavor to the sauce.
  • Adjust cooking times as needed; the roast is done when it pulls apart easily with a fork.
  • If you do not have a Dutch oven, use any oven-safe lidded roaster or a slow cooker as an alternative method.
  • Leftovers store well and flavors often improve after a day in the fridge.
