Creamy Tuscan Chicken is a flavorful and comforting dish featuring succulent chicken breasts cooked in a rich, creamy sauce with garlic, cherry tomatoes, and fresh spinach, finished with Parmesan cheese and served with lemon wedges for a bright touch. This skillet recipe is perfect for a satisfying weeknight dinner.

Ingredients

Chicken

  • 1 tbsp. extra-virgin olive oil
  • 4 (6- to 8-oz.) boneless, skinless chicken breasts
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tsp. dried oregano

Sauce

  • 3 tbsp. unsalted butter
  • 3 garlic cloves, minced
  • 1 1/2 cups cherry tomatoes, halved
  • 3 cups baby spinach
  • 1/2 cup heavy cream
  • 1/2 oz. Parmesan, finely grated (about 1/4 cup)

To Serve

  • Lemon wedges, for serving

Instructions

  1. Cook the chicken: In a large skillet over medium heat, heat the olive oil. Season the chicken breasts all over with kosher salt, freshly ground black pepper, and dried oregano. Place the chicken in the skillet and cook, turning halfway through, until browned on both sides and the internal temperature reads 165°F (74°C), about 8 minutes per side. Remove the chicken from the skillet and transfer to a plate.
  2. Prepare the sauce: Using the same skillet, melt the unsalted butter over medium heat. Add the minced garlic and cook, stirring frequently, until fragrant, about 1 minute. Add the halved cherry tomatoes, season with salt and pepper, and cook, stirring occasionally, until the tomatoes begin to burst, about 5 minutes. Stir in the baby spinach and cook until just wilted, another 2 to 3 minutes.
  3. Simmer the creamy sauce: Pour in the heavy cream and sprinkle in the finely grated Parmesan cheese. Bring the mixture to a simmer, reduce the heat to low, and continue to simmer, stirring occasionally, until the sauce slightly thickens and reduces, about 3 minutes.
  4. Finish cooking chicken in sauce: Return the cooked chicken breasts to the skillet. Spoon some sauce over the chicken and cook, stirring occasionally, until the chicken is heated through and the flavors meld, 5 to 7 minutes.
  5. Serve: Divide the chicken breasts onto plates, spoon the creamy Tuscan sauce over each, and serve with lemon wedges on the side for an added fresh, tangy flavor.

Notes

  • For a lower-fat version, substitute half-and-half for heavy cream, though the sauce will be less rich.
  • Make sure not to overcook the chicken to keep it juicy and tender.
  • You can add sun-dried tomatoes for extra tangy flavor if desired.
  • Serve with crusty bread, mashed potatoes, or over pasta to soak up the creamy sauce.
