Ingredients

Chicken and Cooking Base

  • 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
  • 2 tablespoons oil
  • 4 tablespoons butter
  • 3 teaspoons minced garlic

Soup Base and Seasonings

  • 4 tablespoons flour
  • 1 ½ teaspoons onion powder
  • 1 teaspoon garlic powder
  • 2 cups chicken broth
  • 6 cups fat free or regular half and half
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • 2 ½ teaspoons Italian seasoning blend

Cheeses and Pasta

  • 4 ounces cream cheese, at room temperature
  • 1 cup shredded parmesan cheese
  • 8 lasagna noodles, broken into 2-inch pieces and cooked until tender

Garnish

  • Chopped fresh thyme or parsley

Instructions

  1. Cook the Chicken: Add oil to a large pot over medium-high heat. Add chicken pieces and cook for 5-6 minutes, stirring throughout until fully cooked. Transfer the cooked chicken to a dish, cover, and set aside.
  2. Prepare the Roux: In the same pot, add butter and stir until melted. Add minced garlic and sauté until fragrant, about 1 minute. Sprinkle flour over the butter and garlic mixture and stir continuously until it thickens to form a roux.
  3. Make the Soup Base: Gradually whisk in half and half and chicken broth into the roux. Stir in salt, black pepper, garlic powder, Italian seasoning, and onion powder. Bring the mixture to a boil and let it cook for about 10 minutes, stirring occasionally.
  4. Add Cheeses and Mix: Stir in shredded parmesan cheese and cream cheese until they melt completely and are incorporated into the broth, creating a creamy consistency.
  5. Combine Pasta and Chicken: Add the cooked lasagna noodle pieces and the previously cooked chicken back into the pot. Stir to combine thoroughly. Taste the soup and adjust salt and pepper as needed.
  6. Garnish and Serve: Ladle the soup into bowls and garnish with chopped fresh thyme or parsley and additional parmesan cheese if desired. Serve hot and enjoy!

Notes

  • You can substitute Italian seasoning with a blend of dried basil, oregano, thyme, and rosemary if desired.
  • For a richer soup, use regular half and half; fat free works for a lighter option.
  • Ensure lasagna noodles are broken into small pieces and cooked until tender before adding to the soup.
  • Use fresh herbs for garnish for enhanced flavor and presentation.
