Enjoy crispy, tangy air fryer green tomatoes with a crunchy, seasoned cornmeal and breadcrumb coating. This quick and easy snack or appetizer is perfectly golden and slightly spicy, made healthier by air frying instead of deep frying.

Ingredients

Green Tomatoes

  • 3-4 green tomatoes
  • 1/2 teaspoon salt

Breading Station

  • 1/2 cup flour
  • 2 eggs, whisked
  • 1/3 cup cornmeal
  • 1/3 cup breadcrumbs
  • 1/8 teaspoon paprika
  • Pinch of cayenne pepper

Instructions

  1. Prepare Tomatoes: Slice the green tomatoes into 1/4-inch thick slices and generously coat both sides with salt. Let them sit for at least 5 minutes to draw out moisture and improve texture.
  2. Set Up Breading Station: Arrange three bowls: one with flour, one with whisked eggs, and one with a mixture of cornmeal, breadcrumbs, paprika, and cayenne pepper for seasoning.
  3. Dry Tomato Slices: Pat the salted tomato slices dry thoroughly with a paper towel to ensure the coating sticks properly during breading.
  4. Preheat Air Fryer: Preheat your air fryer to 380°F (193°C) to achieve a crispy texture.
  5. Bread the Tomatoes: Dip each tomato slice first into the flour, then into the egg wash, and finally coat thoroughly with the seasoned cornmeal mixture to get an even crust.
  6. Air Fry: Place the breaded tomato slices in a single layer in the air fryer basket. Cook for 7-9 minutes, flipping halfway through, and spritzing with oil on both sides to enhance crispness.
  7. Serve or Store: Remove the crispy green tomatoes from the air fryer and serve immediately with your favorite dipping sauce, or allow to cool completely and freeze in an airtight container for up to 3 months.

Notes

  • Be careful not to overlap tomato slices in the air fryer to ensure even cooking.
  • Adjust cayenne pepper to taste for desired spice level.
  • Use gluten-free flour, breadcrumbs, and cornmeal if making gluten-free.
  • For extra crispiness, spritz with oil lightly but evenly during flipping.
  • Freeze leftovers in a single layer on a tray before transferring to a container to prevent sticking.
