Crispy and flavorful breakfast potatoes made with tender red potatoes seasoned with paprika, garlic powder, and black pepper. This simple skillet recipe delivers perfectly cooked potatoes with optional oven broiling for a golden, crispy finish. A delicious side to start your morning.

Ingredients

Potatoes

  • 1 1/2 pounds red potatoes, cut into 1/2 inch cubes

Seasonings

  • 2 tablespoons olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Optional Garnish

  • Fresh parsley, chopped (optional, for serving)

Instructions

  1. Heat oil: Heat 2 tablespoons of olive oil in a large oven-proof 10-inch cast iron skillet over medium heat until hot, about 1 minute.
  2. Cook potatoes: Add the 1 1/2 pounds of cubed red potatoes to the skillet and toss well to coat evenly with oil. Let them cook undisturbed for 5 minutes to start browning.
  3. Season potatoes: Sprinkle 1/2 teaspoon paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon ground black pepper over the potatoes. Stir thoroughly to combine the seasonings and potatoes. Continue cooking for another 8-10 minutes, stirring occasionally, until the potatoes are tender.
  4. Optional broil for crispiness: For an extra crispy finish, carefully transfer the skillet to the oven and broil on high for 2-3 minutes until golden brown and crispy on top. Alternatively, you can continue cooking on the stovetop for another 5 minutes stirring often for crispiness.
  5. Serve: Remove from heat and optionally garnish with chopped fresh parsley. Serve the breakfast potatoes immediately while hot and crispy.

Notes

  • Use an oven-proof skillet like cast iron if planning to broil the potatoes.
  • Red potatoes hold their shape well and become tender inside with a crispy exterior.
  • Adjust seasoning to taste, adding more salt or spices as preferred.
  • For vegan and vegetarian diets, this recipe is naturally suitable.
  • Fresh parsley adds color and herbal freshness but can be omitted.
