This Crispy Skin Salmon recipe ensures perfectly cooked salmon with a delightfully crisped skin every time. Using a well-seasoned cast iron skillet and simple ingredients like avocado or olive oil, sea salt, black pepper, and lemon juice, this method locks in flavor and texture. The salmon cooks quickly, ideal for a nutritious weeknight dinner or elegant meal, with juicy, tender flesh and skin that crackles with each bite.

Ingredients

Salmon

  • 2 (4-6 ounce) skin-on salmon filets (~1 inch thick; wild-caught recommended; King salmon preferred for best flavor and texture)

Seasoning & Cooking

  • 2-3 teaspoons avocado or olive oil (divided)
  • Sea salt (to taste)
  • Black pepper (to taste)
  • Juice of 1/2 medium lemon

Instructions

  1. Preheat Skillet: Heat a large, well-seasoned cast iron skillet over medium-high heat to ensure it is hot and ready. A well-seasoned pan is crucial to prevent the salmon from sticking during cooking.
  2. Prepare Salmon: Place the salmon skin side up on a plate. Pat the skin dry thoroughly using a paper towel, then brush a thin layer of oil over the skin. Generously sprinkle both sides with sea salt and black pepper for flavor enhancement.
  3. Place Salmon Skin-Side Down: Once the pan is hot (test by sprinkling a few drops of water, which should sizzle immediately), gently lay the salmon into the pan, skin side down. Press the filets firmly against the pan so the skin lays flat and does not curl up. Immediately reduce heat to medium.
  4. Sear Salmon: Cook the salmon undisturbed for 6-7 minutes. The skin will become crisp, and the flesh will cook about halfway to three-quarters of the way up the sides, as indicated by a shift from translucent deep pink to a lighter pink. During this time, brush the top side of the fish with a bit of oil and season again with salt and pepper.
  5. Flip and Finish Cooking: Using a spatula and tongs if needed, carefully flip the filets to the flesh side. Add the juice of half a lemon to the pan and cover. Cook for 1-2 minutes or until the internal temperature reaches 145°F (63°C), which is the safe cooking temperature for salmon. Thicker filets may require up to 4 minutes on the second side.
  6. Serve: Remove the salmon from the pan once cooked. Serve immediately, ideally skin side up to preserve the crispy texture. This salmon pairs wonderfully with nourish bowls, roasted asparagus, or mashed potatoes for a balanced meal.

Notes

  • Ensuring the salmon skin is very dry before cooking is key for crispiness.
  • Use a well-seasoned cast iron skillet to avoid sticking and promote even searing.
  • Do not move the salmon while searing skin-side down to get perfect crisp skin.
  • Adjust cooking times slightly based on the thickness of your salmon filets.
  • For extra flavor, you can add fresh herbs like dill or parsley after cooking.
