This Crock Pot Reuben Dip is a warm, cheesy, and savory appetizer inspired by the classic Reuben sandwich. Combining cream cheese, mayonnaise, Thousand Island dressing, sauerkraut, tender corned beef, and melty Swiss cheese, it is slow-cooked to perfection for two hours to blend all the flavors. Perfect for parties or gatherings, it’s best served hot with crackers for dipping.

Ingredients

Main Ingredients

  • 8 ounces cream cheese (1 block)
  • 1/2 cup mayonnaise
  • 1/2 cup Thousand Island dressing
  • 1 cup sauerkraut, drained and all juice pressed out
  • 2 cups corned beef, chopped (from deli section)
  • 2 cups Swiss cheese, grated

Instructions

  1. Mix Ingredients: In a medium-sized bowl, combine the cream cheese, mayonnaise, and Thousand Island dressing. Stir until smooth and well incorporated.
  2. Add Remaining Components: Add the drained sauerkraut, chopped corned beef, and grated Swiss cheese to the cream cheese mixture. Stir thoroughly to evenly distribute all the ingredients.
  3. Prepare Crock Pot: Transfer the entire mixture to the crock pot and set the heat to low.
  4. Cook Dip: Cook on low for 2 hours, allowing the flavors to meld and the cheese to melt, stirring once at the end of the cooking time for even consistency.
  5. Serve: After 2 hours, stir the dip one last time and serve hot with crackers for dipping.
  6. Baking Option: Alternatively, preheat the oven to 400°F (200°C). Grease an ovenproof baking dish, transfer the dip mixture into it, and bake for 15 to 20 minutes until hot and bubbly. Serve immediately.

Notes

  • Ensure sauerkraut is well-drained to prevent watery dip.
  • Serve with sturdy crackers or sliced rye bread to complement the Reuben flavors.
  • The dip can be kept warm in the crock pot on the 'warm' setting after cooking.
  • This dip can also be prepared ahead and refrigerated before cooking; just adjust cooking time slightly if starting cold.
  • For a spicier kick, add a pinch of ground black pepper or a dash of hot sauce.
