This creamy and flavorful Crock Pot Spinach Artichoke Dip is a warm, comforting appetizer perfect for gatherings. Combining fresh spinach, tangy artichoke hearts, and a blend of cheeses, this slow-cooked dip melds flavors beautifully with minimal effort—just set it in your crock pot and let it do the work for two hours.

Ingredients

Ingredients

  • 1 10 ounce bag fresh spinach, roughly chopped
  • 1 14 ounce can artichoke hearts, roughly chopped
  • 1 8 ounce block cream cheese, cut into cubes
  • 1 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • 4 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Combine Ingredients: Add the roughly chopped spinach, artichoke hearts, cream cheese cubes, sour cream, shredded mozzarella, Parmesan cheese, and minced garlic into a small crock pot. Stir well to evenly distribute all ingredients.
  2. Slow Cook: Cover the crock pot with its lid and set it to LOW heat. Let the dip cook for 2 hours, ensuring the mixture melds and the cheeses melt.
  3. Stir Midway: After the first hour, remove the lid carefully and stir the dip to mix the ingredients again, which helps prevent sticking and promotes even cooking. Replace the lid and continue cooking for the remaining hour.
  4. Adjust Seasoning and Serve: Once done, give the dip a final stir and taste for seasoning. Add salt and pepper as needed. Serve warm with crackers, chips, or sliced baguette for dipping.

Notes

  • Use fresh spinach for best texture, but frozen spinach can be used if well-drained.
  • For a spicier kick, add a pinch of red pepper flakes or a dash of hot sauce.
  • This dip can be kept warm in the crock pot on the 'keep warm' setting if serving over time.
  • Leftovers can be refrigerated and gently reheated on the stovetop or in a microwave.
