This Crockpot Chicken Alfredo recipe offers a creamy and comforting dish perfect for a simple weeknight dinner. Chicken breasts are slow-cooked with Italian seasoning, heavy cream, garlic, and butter, then combined with Parmesan cheese and dry fettuccine pasta for a rich, homemade Alfredo sauce. The slow cooker method ensures tender chicken and a luscious sauce without the need for constant supervision.

Ingredients

Chicken and Seasoning

  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon Italian seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper

Liquid and Aromatics

  • 1 cup low-sodium chicken broth
  • 2 cloves garlic, minced
  • 2 cups heavy cream
  • 4 tablespoons unsalted butter (½ stick, cut into cubes)

Pasta and Cheese

  • 8 ounces dry fettuccine pasta
  • ½ cup grated Parmesan cheese

Garnish (Optional)

  • Chopped fresh parsley
  • Extra Parmesan cheese

Instructions

  1. Season: Add the chicken breasts to a 6-quart crockpot. Sprinkle the chicken evenly with Italian seasoning, kosher salt, and ground black pepper.
  2. Add Liquids and Aromatics: Pour in the heavy cream and chicken broth over the chicken. Scatter the minced garlic and cubes of unsalted butter on top to infuse rich flavor as it cooks.
  3. Cook Chicken: Cover the crockpot and cook on high heat for 2 hours until the chicken reaches an internal temperature of 165°F and is fully cooked through.
  4. Slice Chicken: Remove the cooked chicken breasts from the crockpot and place on a cutting board. Allow to cool slightly, then slice or chop into bite-sized pieces.
  5. Stir in Cheese and Pasta: Stir the grated Parmesan cheese into the slow cooker until well combined. Add the dry fettuccine pasta, tossing to ensure all noodles are coated by the creamy sauce.
  6. Cook Pasta: Continue cooking on high for about 20 minutes, until the pasta is tender but still firm to the bite. Stir occasionally to prevent sticking.
  7. Return Chicken: Once the pasta is nearly done, return the sliced chicken to the slow cooker and heat through thoroughly.
  8. Serve: Turn off the heat and let the sauce thicken slightly as it cools for a couple of minutes. Serve the Chicken Alfredo garnished with chopped fresh parsley and additional Parmesan cheese if desired.

Notes

  • Use low-sodium chicken broth to better control salt levels in the dish.
  • If preferred, substitute heavy cream with half-and-half for a lighter sauce, though it will be less rich.
  • Make sure to monitor pasta towards the end to avoid overcooking and becoming mushy.
  • Freshly grated Parmesan cheese provides better flavor and texture than pre-grated varieties.
  • This dish pairs well with a crisp green salad or steamed vegetables for a complete meal.
