This rich and creamy Dairy-Free Chocolate Mousse is a luscious dessert perfect for anyone avoiding dairy but still craving a decadent treat. Made with dark chocolate, eggs, and non-dairy milk, it uses whipped egg whites to achieve a light, fluffy texture without compromising on flavor. A hint of cayenne pepper adds an optional subtle warmth, while cacao nibs add a delightful crunch. Ready in just over two hours with minimal hands-on time, it's a perfect make-ahead dessert to impress guests or enjoy a special treat.

Ingredients

Eggs

  • 4 eggs

Chocolate Mixture

  • 3 Tablespoons non-dairy milk
  • 7 ounces dark chocolate, coarsely chopped or chocolate chips
  • Pinch kosher salt
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon cayenne pepper (optional)

Toppings

  • 2 Tablespoons cacao nibs
  • Dairy-free whipped cream (for serving)
  • Fresh berries (for serving)
  • Chocolate shavings (for serving)

Instructions

  1. Separate the Eggs: Carefully separate the eggs into two bowls, placing the yolks in one and the whites in another. Allow both to come to room temperature to ensure better whipping and mixing later.
  2. Melt the Chocolate: Warm the non-dairy milk in a small saucepan or double boiler over medium-low heat until just steaming, avoiding boiling. Add the dark chocolate and stir continuously until completely melted and smooth. Remove from heat and let the mixture cool slightly to prevent cooking the eggs in the next step.
  3. Whip the Egg Whites: Using a stand mixer fitted with a whisk attachment, whip the egg whites on medium speed until foamy. Add a pinch of kosher salt, then increase the speed to medium-high and whip until you achieve stiff peaks. Be careful not to overwhip; the whites should remain shiny and silky.
  4. Combine Yolks and Chocolate: In a large mixing bowl, combine the slightly cooled chocolate mixture with the egg yolks, vanilla extract, and optional cayenne pepper. Stir gently to blend all components thoroughly.
  5. Fold in Egg Whites: Add one-third of the whipped egg whites into the chocolate mixture and fold gently to lighten the batter. Then fold in the remaining egg whites carefully to keep the mousse airy. During the last part of folding, gently incorporate the cacao nibs for added texture.
  6. Chill the Mousse: Spoon the mousse evenly into 4 ramekins. Cover each with plastic wrap and refrigerate for at least 2 hours to allow the mousse to set and develop flavor.
  7. Serve: When ready to enjoy, remove the plastic wrap. Top each ramekin with dairy-free whipped cream, fresh berries, and chocolate shavings for an elegant finish. Serve chilled.

Notes

  • Ensure eggs are at room temperature for best whipping results.
  • Do not overheat the milk to avoid burning the chocolate or scrambling the eggs.
  • Take care not to overwhip egg whites; they should stay glossy and smooth.
  • Cayenne pepper is optional but adds a nice subtle kick that complements the chocolate.
  • The mousse can be stored covered in the refrigerator for up to 24 hours.
  • For a vegan alternative, substitute eggs with aquafaba but note the texture and flavor will vary.
