This Deluxe Egg Salad Croissant Sandwich is a delicious and elegant twist on the classic egg salad. Creamy, flavorful egg salad mixed with crunchy vegetables like celery and radishes is sandwiched inside buttery, flaky croissants, making it a perfect meal for brunch, lunch, or a light dinner.

Ingredients

Egg Salad

  • 4 large eggs
  • ½ stalk celery, finely chopped
  • 2 medium radishes, finely chopped
  • 1 teaspoon finely chopped shallot
  • 1 tablespoon chopped parsley
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper

Sandwich

  • 4 croissants
  • 1 tablespoon butter
  • 4 curly lettuce leaves
  • 2 thinly sliced radishes

Instructions

  1. Boil the eggs: Place the eggs in a small saucepan and cover with water. Bring the water to a boil over medium-high heat.
  2. Prepare ice bath: While the water comes to a boil, fill a medium mixing bowl with water and ice to create an ice bath.
  3. Cook eggs off heat: Once the water reaches a boil, remove the pan from heat, cover it, and let the eggs sit for 10 minutes to hard cook.
  4. Cool eggs: Transfer the eggs immediately to the ice bath and allow them to cool completely for about 10 minutes.
  5. Peel and mash eggs: Peel the cooled eggs carefully and place them in a mixing bowl. Mash the eggs with a fork until they break into small, even pieces.
  6. Mix egg salad: Add the finely chopped celery, radishes, shallot, and parsley to the mashed eggs. Stir in mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper until well combined.
  7. Prepare croissants: Slice each croissant in half horizontally. Spread butter on the bottom half of each croissant.
  8. Assemble sandwiches: Place a curly lettuce leaf on the buttered croissant halves. Spoon the egg salad onto the lettuce, then top with thin sliced radishes. Close with the croissant tops.
  9. Serve: Serve the sandwiches immediately or refrigerate until ready to eat.

Notes

  • To peel eggs easily, gently crack all over and roll under your palm before peeling.
  • For extra flavor, consider adding a pinch of smoked paprika or a dash of hot sauce to the egg salad.
  • Use fresh croissants for best texture; lightly toasting them can add extra crispness.
  • Mayonnaise amount can be adjusted to preferred creaminess.
  • These sandwiches are best enjoyed the same day but can be refrigerated for up to 24 hours.
