Easy Bulgogi is a classic Korean BBQ beef dish featuring thinly sliced marinated sirloin steak cooked quickly in a hot skillet. The marinade blends soy sauce, garlic, ginger, sesame oil, and a touch of sweetness to create a savory, slightly spicy, and aromatic flavor profile. Perfect for a flavorful weeknight dinner or Korean-inspired meal.

Ingredients

Marinade

  • ⅓ cup soy sauce
  • 2 green onions, chopped, dark green parts separated from white and light green parts
  • ¼ yellow onion, thinly sliced
  • 3 tablespoons white sugar
  • 3 cloves garlic, minced
  • 2 tablespoons toasted sesame seeds
  • 1 tablespoon sesame oil
  • ¼ teaspoon Korean red pepper flakes
  • ¼ teaspoon minced fresh ginger
  • ⅛ teaspoon ground black pepper
  • 1 teaspoon honey, or to taste

Main Ingredient

  • 1 ½ pounds beef sirloin steak, cut very thin using kitchen shears

Instructions

  1. Prepare the marinade: In a large glass or ceramic bowl, whisk together soy sauce, the white and light green parts of the green onions, yellow onion slices, white sugar, minced garlic, toasted sesame seeds, sesame oil, Korean red pepper flakes, minced fresh ginger, and ground black pepper until well combined.
  2. Marinate the beef: Add the thinly sliced beef sirloin to the marinade and toss well to evenly coat all the beef slices. Cover the bowl tightly with plastic wrap and refrigerate to marinate for at least 1 hour or up to 1 day for deeper flavor.
  3. Cook the beef: Heat a wok or large skillet over medium heat until hot. Working in batches to avoid overcrowding, add the marinated beef slices along with the marinade to the skillet. Stir frequently and cook the beef until it is fully cooked through, about 5 minutes per batch.
  4. Caramelize with honey: Towards the end of cooking each batch, drizzle honey over the beef and stir well to caramelize the meat slightly, adding a subtle sweetness and glaze.
  5. Garnish and serve: Once all the beef is cooked, garnish with the dark green parts of the chopped green onions. Serve immediately with rice or your preferred side dishes.

Notes

  • For the best texture, slice the beef very thinly against the grain using kitchen shears or a sharp knife.
  • Marinating for longer than 1 hour enhances the flavor but do not exceed 24 hours to avoid overly soft beef.
  • If preferred, adjust the amount of Korean red pepper flakes to control the spice level.
  • Serve bulgogi with steamed rice and Korean side dishes such as kimchi or pickled vegetables for a complete meal.
  • Use a well-heated wok or skillet to achieve quick cooking and caramelization without steaming the meat.
