This easy and delicious Burritos recipe features creamy refried beans mixed with cheddar cheese and taco seasoning, wrapped in soft flour tortillas. Perfect for a quick meal that serves up to 12 people with mild, comforting flavors and satisfying textures.

Ingredients

Bean Filling

  • 1 (30-ounce) can refried beans
  • ¼ cup Crisco shortening
  • ⅓ cup milk
  • 1 cup shredded cheddar cheese
  • 1 teaspoon taco seasoning

Burritos

  • 12 uncooked soft taco size flour tortillas
  • 1½ cups shredded cheddar cheese

Instructions

  1. Prepare bean filling: Add the refried beans, Crisco shortening, and milk to a medium saucepan. Heat the mixture over medium heat, stirring frequently until it becomes smooth and creamy. Once smooth, stir in 1 cup of shredded cheddar cheese and 1 teaspoon of taco seasoning until well combined.
  2. Cook tortillas: Follow the package directions to cook the flour tortillas. This typically involves warming them on a skillet or microwave until soft and pliable. Keep the tortillas warm by wrapping them in a clean towel and setting aside until needed.
  3. Assemble burritos: Place one warmed tortilla on a flat surface. Spoon about ⅓ cup of the bean mixture into the center, then sprinkle with 2 tablespoons of shredded cheddar cheese. Fold the edges of the tortilla toward the center, then roll it up tightly, tucking in all of the filling completely to form a burrito. Repeat this process for all tortillas.

Notes

  • Use soft taco size flour tortillas for easy rolling and best texture.
  • Keep assembled burritos warm by wrapping in foil if preparing ahead.
  • Optional: Serve with salsa, sour cream, or guacamole for added flavor.
  • You can substitute Crisco shortening with butter or vegetable oil if preferred.
  • For a spicier kick, add extra taco seasoning or hot sauce to the bean mixture.
