Ingredients

Vegetables and Beans

  • 1 tomato, diced
  • 1 cup canned black beans, drained and rinsed
  • 1 cup canned black-eyed peas, drained and rinsed
  • 1 cup sweet corn kernels
  • ½ cup green bell pepper, finely chopped
  • 2 tablespoons chopped red onion
  • 1 avocado
  • 1 teaspoon minced garlic

Dressing

  • 3 tablespoons olive oil
  • 1 tablespoon lime juice
  • ½ teaspoon dried oregano
  • ⅓ teaspoon black pepper
  • ¼ teaspoon salt

Instructions

  1. Combine Bean Mixture: In a large bowl, combine the black beans, black-eyed peas, diced tomato, corn, green bell pepper, and red onion to create the base of the cowboy caviar.
  2. Prepare Dressing: In a small jar, add the olive oil, lime juice, minced garlic, dried oregano, black pepper, and salt. Seal the jar tightly and shake vigorously until the dressing is thoroughly mixed and emulsified.
  3. Toss Bean Mixture with Dressing: Pour the prepared dressing over the bean and vegetable mixture. Stir gently to ensure everything is evenly coated with the flavorful dressing.
  4. Add Avocado: Peel the avocado, remove the pit, and dice it into bite-sized pieces. Add the diced avocado to the bowl with the dressed bean mixture.
  5. Mix Well & Chill: Gently fold the avocado into the mix to avoid mashing it. Cover the bowl with plastic wrap or transfer it to an airtight container. Chill the cowboy caviar in the refrigerator for at least 30 minutes to allow the flavors to meld. Stir gently again before serving.
  6. Serve & Enjoy: Serve the cowboy caviar garnished with fresh cilantro, alongside corn chips and fresh lime wedges for a burst of extra flavor and texture.

Notes

  • Use fresh lime juice for the best tangy flavor in the dressing.
  • Chilling the salad is important to let flavors meld together and deepen.
  • To make it spicier, add finely chopped jalapeño or a dash of cayenne pepper.
  • This dish stores well in an airtight container for up to 2 days, though avocado may darken over time.
  • Serve with tortilla chips, on tostadas, or as a vibrant salad side dish.
