Ingredients

Ingredients

  • 28-ounce can whole peeled tomatoes, slightly drained
  • 2 (10-ounce) cans diced tomatoes with green chiles, undrained
  • 1/2 cup fresh cilantro
  • 1/4 of an onion, roughly chopped
  • 1 small lime, juice from
  • 1 clove garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon sea salt, or more to taste
  • Pinch of granulated sugar

Instructions

  1. Combine Ingredients: Add the whole peeled tomatoes (slightly drained), diced tomatoes with green chiles (undrained), fresh cilantro, chopped onion, lime juice, minced garlic, ground cumin, sea salt, and a pinch of sugar to a food processor.
  2. Pulse to Desired Consistency: Pulse the ingredients a few times in the food processor until the salsa reaches your preferred texture, making sure no large chunks remain.
  3. Adjust Seasoning: Taste the salsa and adjust the salt or other seasonings if needed to suit your taste preferences.
  4. Chill for Best Flavor: For optimal flavor, refrigerate the salsa for at least 1 to 2 hours before serving. This allows the flavors to meld beautifully.
  5. Store Properly: Store any leftover salsa in the refrigerator for up to 1 week. This recipe yields just under 6 cups, which can fill about three pint jars—perfect for sharing with friends and neighbors.

Notes

  • For a chunkier salsa, pulse fewer times. For a smoother salsa, pulse more.
  • Adjust the amount of jalapeños or green chiles especially if you prefer a milder or spicier salsa.
  • If fresh tomatoes are available, you can substitute canned tomatoes for fresher flavor, but canned tomatoes provide convenience and great taste.
  • This salsa can be served immediately but tastes best after chilling to let the flavors develop.
  • Feel free to experiment by adding a little chopped onion or extra cilantro if desired.
