This Easy Sweet Potato Egg Casserole is a hearty and flavorful baked dish featuring a savory combination of turkey sausage, tender sweet potatoes, and a rich, cheesy egg mixture. Perfect for a wholesome breakfast or brunch, this casserole blends the natural sweetness of the potatoes with the robust taste of sausage and the creaminess of mozzarella cheese, all baked to a golden perfection.

Ingredients

For the Base:

  • 3 garlic cloves (minced)
  • 1 lb uncooked turkey sausage
  • 5 cups cubed sweet potatoes (1-inch cubes)
  • 1 green bell pepper (diced)
  • 1/2 large yellow onion (finely diced)
  • 2 tbsp avocado oil (or olive oil)

For the Egg Mixture:

  • 1/2 cup milk (whole milk for richness)
  • 10 large eggs
  • 1/2 cup grated mozzarella cheese (Sargento brand recommended)
  • 1 tsp salt
  • 1 tsp dried thyme
  • 1/2 tsp pepper

Instructions

  1. Preheat Oven and Prepare the Baking Dish: Preheat your oven to 350°F (175°C). While the oven is heating, prepare your vegetables by chopping them all up as directed. Grease a 9×13-inch casserole dish to prevent sticking during baking.
  2. Cook the Vegetables: Heat avocado oil in a Dutch oven or large saucepan over medium heat until hot. Add the chopped onion, green pepper, and sweet potato to the pan, cooking for 8-9 minutes while stirring occasionally until the vegetables begin to soften. In the final minutes, add minced garlic and sauté briefly. Remove vegetables and spread evenly in the bottom of the prepared casserole dish.
  3. Cook the Sausage: In the same pan, add the turkey sausage and cook thoroughly, breaking it into small pieces as it cooks. Once fully cooked, add the sausage to the vegetables in the casserole dish and mix well to combine.
  4. Prepare the Egg Mixture: In a mixing bowl, whisk together the eggs, milk, salt, dried thyme, pepper, and shredded mozzarella cheese until smooth and well combined.
  5. Combine and Bake: Pour the egg mixture evenly over the vegetable and sausage mixture in the casserole dish. Stir gently to distribute the egg mixture throughout. Place the dish in the preheated oven and bake for 40-45 minutes, or until the center is firm to the touch. If the top browns too quickly, cover loosely with foil halfway through baking to prevent burning.
  6. Cool and Serve: Remove from oven and allow the casserole to cool for about 15 minutes before serving. This resting time helps set the casserole and enhances the flavors.

Notes

  • Make sure to cut sweet potatoes into 1-inch cubes to ensure even cooking.
  • Use whole milk for a richer egg mixture, but you can substitute with lower-fat milk if desired.
  • Cover the casserole with foil if it browns too fast to avoid burnt top.
  • Letting the casserole rest after baking helps it firm up and makes slicing easier.
  • For extra flavor, fresh herbs like thyme complement the dish well, but dried thyme works perfectly.
