Delicious and nutritious Energy Balls packed with oats, nuts, seeds, and natural sweeteners. Perfect for a quick breakfast or a healthy snack on the go, these no-bake bites are easy to make and store well for multiple days.

Ingredients

Dry Ingredients

  • 1 ½ cups old-fashioned oats
  • 1 teaspoon ground cinnamon
  • ½ teaspoon fine salt

Nuts and Seeds

  • ¾ cup pecans or walnuts
  • ½ cup almonds
  • ½ cup pepitas (green pumpkin seeds)
  • ¼ cup flaxseeds or chia seeds

Wet Ingredients

  • 16 ounces creamy peanut butter or almond butter
  • ½ cup honey or maple syrup

Instructions

  1. Combine Dry Ingredients: Place the oats in a large mixing bowl. Add the cinnamon and salt, and stir them together thoroughly to distribute the flavors evenly. Set this bowl aside for later use.
  2. Toast Nuts: Heat a large skillet over medium-low heat. Add the pecans and almonds, stirring frequently to ensure even toasting. Continue until fragrant, about 3 to 4 minutes.
  3. Toast Pepitas: Transfer the toasted pecans and almonds to a food processor bowl or a cutting board if you don’t have one. Return the empty skillet to the heat, add the pepitas, and warm them until fragrant and they begin making popping noises, about 1 to 2 minutes.
  4. Toast Flaxseeds: Add the flaxseeds to the skillet with the pepitas and stir constantly while cooking for about 30 seconds. Then transfer this mixture to the food processor.
  5. Process Nuts and Seeds: Blitz the nuts and seeds mixture in the food processor until pieces are broken down smaller than your pinky fingernail. If you don’t have a food processor, chop the nuts finely on a cutting board. Pour the processed nut and seed mixture into the bowl with oats.
  6. Mix Wet Ingredients: In a medium mixing bowl, combine the peanut butter and honey. Stir vigorously until the mixture is smooth and well blended.
  7. Combine All Ingredients: Pour the peanut butter and honey mixture into the bowl with the oats and nuts. Use a large spoon to mix everything together evenly, making sure no dry oats remain. This requires some good arm strength!
  8. Form Energy Balls: Using a medium cookie scoop or a heaping tablespoon, scoop the mixture and roll it into balls with your hands. Place the formed balls into an airtight container. Repeat until all mixture is used.
  9. Storage: Store the energy balls at room temperature for up to 10 days. For longer freshness and moisture retention, refrigerate for up to 3 weeks or freeze for several months. If frozen, allow to defrost for about 30 minutes before serving.

Notes

  • Use either peanut butter or almond butter depending on your preference or dietary needs.
  • Honey can be substituted with maple syrup for a vegan option.
  • Chop nuts finely if you don’t have a food processor to ensure better texture.
  • Toast the nuts and seeds gently to enhance their flavor without burning.
  • Energy balls can be stored at room temperature, refrigerated, or frozen depending on how long you want to keep them fresh.
  • For a nut-free version, substitute nuts with additional seeds like sunflower or pumpkin seeds.
