Perfect for breakfast or a healthy snack, these muffins bake up fluffy with a tender crumb and can be customized to your taste.

Ingredients

Dry Ingredients

  • ¾ cup all-purpose flour
  • ¾ cup whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Wet Ingredients

  • 1 cup plain Greek yogurt (made with whole milk fat preferred)
  • ⅓ cup maple syrup
  • ¼ cup unsalted butter (melted and slightly cooled)
  • 2 eggs (lightly beaten)
  • 2 teaspoons pure vanilla extract

Add-Ins (Choose One or Mix & Match)

  • 1 cup chocolate chips
  • 1 cup shredded carrots
  • ½ cup raisins
  • 1 teaspoon cinnamon
  • ¼ teaspoon ground ginger
  • 2 cups finely diced strawberries (optionally add 1 tablespoon fresh lemon zest)
  • 2 cups blueberries (optionally add 1 teaspoon cinnamon)
  • 2 cups finely diced cherries

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 375 degrees F (190 degrees C). Grease a 12-cup standard muffin pan thoroughly with nonstick spray to prevent sticking.
  2. Mix Dry Ingredients: In a medium mixing bowl, combine the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt. Stir these together until evenly distributed.
  3. Mix Wet Ingredients: In a separate bowl, stir together the plain Greek yogurt, maple syrup, melted and slightly cooled unsalted butter, lightly beaten eggs, and pure vanilla extract until well combined.
  4. Combine Mixtures: Gently fold the wet ingredients into the dry ingredients, mixing carefully to maintain a thick batter consistency. Avoid overmixing to keep muffins tender.
  5. Add Your Desired Mix-Ins: Stir in your chosen add-ins such as chocolate chips, shredded carrots with raisins and spices, or fresh diced fruit. For variety, you can add a tablespoon of different add-ins to individual muffin cups alongside the batter.
  6. Fill Muffin Cups: Spoon the batter into the prepared muffin tin, filling each cup about ¼ cup full to ensure even baking.
  7. Bake: Place the muffin tin in the preheated oven and bake for 16 to 18 minutes. The muffins are done when the edges turn lightly golden brown and a cake tester or toothpick inserted into the center comes out clean.
  8. Cool: Remove the muffins from the oven and transfer them onto a wire rack to cool completely before serving.

Notes

  • You can customize these muffins by mixing different add-ins to create various flavor combinations.
  • Using whole milk Greek yogurt helps keep the muffins moist and rich.
  • Ensure the melted butter is slightly cooled so it doesn't cook the eggs when mixed.
  • Do not overmix the batter to avoid dense muffins; a thick batter is ideal.
  • Store muffins in an airtight container at room temperature for up to 3 days or freeze for longer storage.
  • Adding lemon zest to strawberries or cinnamon to blueberries enhances their flavor.
