These Flourless Banana Oat Waffles are a wholesome, gluten-free breakfast option made with ripe bananas, rolled oats, and a blend of warm spices. Naturally sweetened and packed with fiber, they are simple to prepare in a blender and cook quickly in a waffle iron. Perfect for a nutritious start to your day or a tasty brunch treat, they pair wonderfully with fresh fruit or your favorite toppings.

Ingredients

Dry Ingredients

  • 1 ¾ cups old fashioned rolled oats (gluten-free certified if necessary)
  • 1 ½ tsp cinnamon
  • 1 ½ tsp baking powder

Wet Ingredients

  • 2 medium spotty bananas
  • 2 eggs
  • ⅔ cup unsweetened almond milk (or 2% milk, whole milk, cashew or oat milk)
  • 1 tsp vanilla extract

Instructions

  1. Blend the batter: Add all ingredients to a high-speed blender and blend for 30 to 45 seconds until the mixture forms a smooth batter. Allow the batter to sit for 4 to 6 minutes to thicken while you heat your waffle iron.
  2. Preheat and grease waffle iron: Heat your waffle iron and lightly grease it with non-stick spray or butter to prevent sticking. Make sure it is fully hot before adding the batter.
  3. Cook the waffles: Spoon the batter into the hot waffle iron and cook until the waffles are golden brown and cooked through in the center. Cooking time and batter quantity will vary depending on the size and strength of your waffle iron—follow the manufacturer’s recommended cook time for best results.
  4. Repeat: Continue cooking waffles until all the batter is used.
  5. Serve warm: Let the waffles cool for 1 to 2 minutes and serve warm with your favorite toppings, such as fresh fruit.

Notes

  • Make sure to use ripe, spotty bananas for natural sweetness and better flavor.
  • Letting the batter rest thickens it and improves waffle texture.
  • If you don’t have a waffle iron, you can cook the batter in a non-stick skillet to make pancakes.
  • To keep waffles crispy, place cooked waffles on a wire rack instead of stacking them.
  • Use gluten-free oats if you need this recipe to be gluten-free.
